Rainy day in Fl. with a 9 yr. old after school who wants meatballs. I've always used breadcrumbs but Ina Garten says soaked white bread is the key to moistness. Which way to go ?

We're headed back to Savannah for the first time in ten years. Specifically remember having the whole fried flounder at Garibaldi's. Yummmm. Is the restaurant still there and do they have the flounder this time of the year ? And of course any recommendations. Thanks.

Viet Garden ?
recently had Sun. lunch at Viet Garden in Orlando with my wife. Kinda wanted to chill, have a couple beers with a few apps. The waiter, older guy, was back to the table 3 times in 5 min. wanting our entree order. We kept explaining we wanted to take time, check out the menu and eat a few different things. He got exasperated and handed us off to another waiter. Same thing happened, In a nearly empty restaurant. Did we break some Vietnamese rules or was it the restaurant ? The food was ok but not worth the attitude. By the way, they both spoke perfect English.

What would be some good types of meat for grinding for a 80-20 or 70-30 hamburger ? Chuck steak in my neck of the woods is more pricey than the London broil cut.
Daytona lunch ?
So.......I had lunch at Oceans in NSB. A blackened grouper sandwich. Not great but better than most. Fresh potato bread, fresh lettuce and typical tomato. and a side, pasta and veggie salad, for 12 bucks. But the fish itself was about a quater inch thick. If grouper have to be what 20" or more filets would have to be thicker, yes? So maybe tilapia ?
