BARcelona Tapas, Indianapolis

I have been there three times, each time it gets a little less desirable. The same remoulade sauce, and same menu. Too bad, the concept is nice and the location is hopeful.

Indianapolis for a conference...

Palomino is another chain restaurant, we also have Oceanaire and McCormack & Schmick, they are all very good, but you could have the same meals in other cities. Recess and R Bistro are best independent choices. New spot in Broad Ripple is Monon Food Company (MoFoCo) on Cornell by Monon trail, will be a nice change from brew pub options.

Rhubarb-Braised Chicken Thighs

I made this last night. Only could pick up skinless, boneless thighs, so I increased the shallots for faster flavor. I cut the rhubarb thinner, to finish faster in the oven. Overall it was almost a 30 minute meal. Great flavors, nice twist on spring chicken. Served it on a bed of orzo, with a side of spring peas. Nice meal.

Tofu and Broccolini Pad See Ew

Made it last night, right from the recipe. Good comfort food. Needs some condiments such as red pepper flakes, pickled chilies, lime wedges, or cilantro. It needed a high end. I would also add more veggies, there were far more noodles than broccolini bits.

Milano Inn, Indianapolis

I agree, Amici's is owner operated, and can be very good. Avoid the Friday Saturday rush. But this will be the best you can do downtown. Capri and Amalfi are going to be 7 to 8 miles north, but will be better Italian meals. There is a new Italian place 900 south meridian, but I have not tried it yet.

Fish in Indianapolis?

Now that 56th Fish Market is closed, where is one to buy fresh fish in Indy? I did try Daddy Jacks and found it very ordinary. I am doing frozen from Costco now.

Where to try next in Indianapolis?

I have never been able to manage a quorum to visit Z's, I am curious as well. I do think SI or Scholors Inn is very pretty, but very average on food. Never had anything to enjoy there. R Bistro is the place to go in that area. 14 West was very pompous steakhouse wannabe. I did not enjoy it at all. Food was large portioned, and minimal flavored. Oceanaire is always good, and Palomino is as well, I like it for lunch. The Buggs Temple area is one to watch. I have not tried the first attempts, but I hope Euphoria has a chance. Side note, for the north east side on 82nd street between Dean and Allisonville the Taiwan Tearoom is great. They have buba tea, and a dozen apps that are well crafted with first class ingredients. Let's keep this one going.

My shortcut to eggs florentine was once Stoffer's red box "Welsh Rarebit". Since this has all but vanished from my area, I will be happy to give this creme fraiche mixture a try.

Black Pepper–Manchego Cheese Puffs

Made them yesterday. Since I do very little baking, I try to treat it like science, without change at all. So here is where I changed it. I only had 2% milk, so I used it. I also cut the recipe in half, with 2 eggs plus one yolk. It all worked fine, they were great (they were done in about 25 minutes). I like the zip lock bag idea.

Pepper-Roasted Cauliflower

I made it per the recipe. It was very nice. My head of cauliflower was sort of small, so I was able to share the silpat with a few filets of salmon that I rubbed with soy, pepper and evoo. Saved another pan!

Pad Kee Mao (Spicy Ground Chicken and Rice Noodles)

Nice introduction to Thai cooking (that does not come from a pouch of pre-mix curries). I only had frozen chicken breast, so I cubed it after cooking, I do not trust ground chicken for some reason. I think it would work well with shrimp. I found the noodles grabbed most of the liquid, I would add a bit more the next time. Nice flavors! It should be a regular in our house.

Fresh corn tortillas in Indianapolis

The tamale place is really pretty good. It is a drive, unless you live on the west side, but the quality worth it. If you are going to carry out, I would arrive early for a better selection of fillings. They offer about a dozen different tamales and when they sell out, you get the ones nobody else wants.
On the tortillia and taco frontier, I wish I could find a place that was trustworthy. All the small restaurants that I liked, have gone out of business. Any ideas out there?

Eggplant and Tomato Stew (Guiso de Berenjena)

I had Italian eggplant in the garden, Roma tomatoes as well, I followed the recipe to the letter, served over rice, it was great. I did find that the eggplant did not turn golden brown at all. I did fry them in about 1/2" of oil in a wok. They turned translucent grey at best (and they were fresh from the plant!). I think to do this again, I would lay the eggplant on a baking sheet and roast them just brushed with olive oil. Turn them half way, and call it suitable for stew. I have started this oven roasting with eggplant parmesan when I noticed a number of people would not have a second helping because of perceived oil in the dish.

Dutch Baby Pancake

My memory of this dish came from Sunset Magazine in 1962! It called for your (then brand new) blender to whip up the batter for about two or three minutes, they were not lumpy and went sky high in the oven! The kids loved the Big Dutch Baby "monster" that came out of the oven.

Pasta e Fagioli

My memory of pasta e fagioli is a Friday "meatless" dish. For my vegan daughter, this is a must. Skip lard and pancetta, pull more stock flavor with onion celery and carrot. The sage in this sounds nice, I will give it a try this week.

Winter Greens Lasagna

It was a hit. I cut it in half, since I only had kale, I left out the chard. I would do the ricotta and the creme fraiche in more of a custard, wisk in milk or egg to make it a little more "spreadable". The no boil noodles sort of resisted the cold cheeses. Other than that it was a nice dish, and I would make it again.

Roasted Delicata Squash Salad

I could not find a delicata squash, so I used a turban squash, it worked well, the ricotta salata was great! My first time using it, very salty, but added the high note to bounce off the sherry vinegar with the squash and spinach filling up the lows. Nice salad.

French Lentil Soup with Tarragon and Thyme

My first experience with French Lentils, they are so small!! Also they float while cooking, and sink when done. I am a fan of Ms Moskowitz and her book "Vegan with a Vengeance". This is a fine soup, as written above. I used Better than Bullion "No Chicken Stock" it was good, but watch the salt.Try it.
