Best Vanilla Cake

Just saw this, sorry! Glad you like the recipe as much as I do! I've never made it as cupcakes, but I know my mom has. I'll ask if she has any notes on baking times for the cupcake version.

Happy National Pancake Day!

So evidently today is National Pancake Day. Who knew? But it inspired me to make miniature German pancakes in my new(ish) miniature cast iron skillets. Holy cow, I love German pancakes.

They don't have it at Restaurant Depot. At least the last time I checked they didn't. How much do you need? I have at least 20lb in my freezer.

Royal India Bistro--in the Rio

I was just at a conference in Las Vegas this weekend, held in the Rio. I popped in the Royal India Bistro there, and was very pleasantly surprised. They may charge $9 for the rice, but the food was excellent. We had Chicken Saag, and the girls shared Chicken Korma (my husband and the kids tagged along to have fun). I enjoyed it so much that I went back for the lunch buffet the next day (rather than eating the exceptionally mediocre conference fare). $14.99 for the lunch buffet, and the food actually had some perceptible heat. Not much, but still, better than most Indian buffets I've tried!

My girls (and I) love it when the "baby grapes" appear at TJs in August! I can't abide the texture of regular grapes when frozen--a little too much tooth for me--but the champagne grapes are marvelous straight from the freezer. We enjoy them fresh in season, and always freeze a few cartons for later enjoyment.

Trader Joe's Yay/Nay Thread - August 2013 [old]

The red lambrusco (a sparkling, sweet, chilled red) has been a big hit at our pizza nights (I built a wood-fired oven in our backyard, and we like to entertain). It is darn tasty, but I'm more of a crisp, dry, white wine kind of gal. I quite like the TJ's Chilean Reserve Chardonnay for $3.99. Great for entertaining on a budget!

Joyride Taco House

I went to Joyride Taco House this week, and didn't see any mention of it on this board, so I thought I'd post a few comments.

Bottom line: it was excellent, and I'm VERY happy to have it in the neighborhood.

Joyride Taco House is in the same building as Postino East, and is also an Upward Projects restaurant.

Chips and salsa were brought quickly to the table when we sat down, and I loved them. The salsa had a nice smoky flavor and a pleasant bit of heat, and the chips were fresh and salty. I love salt, so this was definitely a bonus for me.

We shared a chicken quesadilla with the table. The serving size was very generous for the four of us. The homemade corn tortillas were perfectly prepared and crisped nicely in the quesadilla, the cheese very good quality, and teh chicken flavorful enough. Just well prepared food made with good quality ingredients--and that counts for a lot!

I had a baja fish and a carnitas taco. The fish taco was exceptional. Perhaps the best fish taco I've ever had. The carnitas was flavorful and tasty, and clearly made with great ingredients, but the fish taco was the clear winner for me.

My parents both had the crispy fish tacos, and my husband had a chicken tinga (not his favorite, but he didn't elaborate) and the carne asada (which he seemed to enjoy). Not a single negative comment from anyone at the table, though.

We tried the house margaritas as well, and they were fabulous. Incredibly smooth, but definitely strong enough. ;-) And there are no purchased mixes at this place--just freshly squeezed, freshly prepared juices and homemade mixers--and you can really taste the difference. Bright, flavorful, refreshing, and not overly sugary. I think I have a new favorite margarita in town.

They're still very new, and seem to be working out a few kinks. I say this because the kitchen decided not to charge us for a couple of the tacos because the timing wasn't quite up to their standards. Not that we could tell. From our perspective, we had absolutely no complaints. But it was really lovely to know that the restaurant placed such an emphasis on detail and quality.

Italian food Market????

The little grocery side at Gelato Dolce Vita in Mesa has a good selection of really great meats and cheeses. Some dry and canned goods as well. Not the biggest selection, but everything they carry is really good.

Gelato Dolce Vita has expanded to include a fabulous selection of Italian meats and cheeses. They have a few tables and make some exceptional food in the kitchen, too. In Mesa.

We always get so excited when we see that the champagne grapes are back in season! We usually buy a few extra boxes and throw them in the freezer for a tasty frozen snack after the fresh ones are gone.

Got them last week at my store (Phoenix), and that's the first time I'd ever seen them. They were on an endcap at the cashier station.

My mom used to buy candied coconut for us when I was little, too. Didn't much like it then, either (or the carrots)--too sweet for me, even then! Give me salt any day.

I absolutely adore the roasted coconut chips, and pretty much love anything coconut, but these were just ok. It's not that they tasted bad, but they're just not worth the calorie bomb, and a little too sweet for my taste.

I despise eating potatoes, but I have to agree, bread recipes with potato are awesome. If I didn't already have a magnificently tender, moist, flavorful cinnamon roll recipe (no potatoes, but lots of butter and some eggs) I'd have to experiment. But even if you came up with a superior recipe, I don't think I could stray from mine, which has been a favorite my whole life. I don't think anything else would taste *right* to me, no matter how good!

Still, if you come up with a perfect recipe, let me know so I could try it. You know, in the name of science. ;-)

I've never detected a discernible date in STP. It all gets incorporated so evenly, and just becomes part of the general flavor, in my experience.

I baked challah this morning for only one reason: because I have tons of gorgeous peaches and I got it in my head to make mascarpone, peach, and honey grilled cheese sandwiches. Dear God, heaven on a plate. I'd call that experiment a big success. Must plan many brunches now to have excuses to make them again.
