Help me update my major kitchen appliances, please!

Just found out the Bosch does not have a heated dry function. Do you find yourself drying the dishes by hand before you put them away or does the heat from the stainless steel really dry them like the salesperson claimed?

Thanks C. Oliver. If you don't mind one last question, do you get hot spots in your pots and pans on the Samnsung induction? That's the reason I hate the max burton, there are hot spots in the pans, you can see where the coils are located just by boiling water. I'm hoping for a more even heat like I get with my electic cooktop.

Help me update my major kitchen appliances, please!

I want to upgrade my stove, over the stove microwave, dishwasher, fridge. I want stainless steel, and nice quality. All of my appliance are standard size, so no 6 burner stoves or huge refrigerators. I have to get an electric or induction cooktop, gas isn't an option. I'd like to stay under $4k for everything if possible, willing to spend more if I need to.

So far I've decided on the Bosch 500 OR 800 series dishwasher, but the rest is up in the air.

I have a Max Burton single induction portable unit and to be honest, I don't love it. I bought it because I really though I wanted to upgrade to induction at some point but unless the full size units are better, I'm leaning towards electric and not induction.

Off topic here but we don't drink milk so we keep powdered milk in the pantry for the few times when something we are baking calls for milk.

I think what you did was fantastic. My father can't tolerate any heat in food and I think your gesture of making less spicy versions is extremely nice. Had he been at your party he'd have gone hungry if you only had spicy version.

What pot to use for braising for 1 or 2 people?

I'm with JT, I only cook for two but I wouldn't want anything smaller than 3.5 quarts. Sometimes I wish I had the 5 qt braiser! That being said we always like to cook with leftovers in mind.

I thawed pork in running water and the meat touched the water

More than once I've defrosted meat in ziploc bags in a bowl of water only to have th bag leak in water. I always pat them dry, but there's no reason nt paying them dry will hurt anything. It's just water, there's water in the gravy . . .

Best Indian lunch buffet in NOVA?

We will be in Fairfax but more than willing to drive elsewhere. Karaikudi was our favorite but it seems to have gone down hill. We like Saravana but my gf would rather not have an all vegetarian lunch. We went to Gharer Khabar on Friday and really liked it, but we're looking for a buffet for lunch on Monday.

Disappointing T Bone steaks, alternate uses?

Thanks for all the good replies. We actually bought a quarter of a cow so all these ideas are great too for the 5 huge sirloin steaks that we have. These sirloin steaks are about a foot long, four or five inches wide, 1.5" thick! We had no idea we'd get them like that lol.

Disappointing T Bone steaks, alternate uses?

We have five 1.5" thick grass fed T Bones that we're pretty disappointed with. We cooked one last night (seared in cast iron and finished in oven) and it was pretty tough and not super flavorful. This cut had very little marbling to it. We'd rather not eat it as a steak again but don't know what to do with it. I'd hate to turn it into stew meat or hamburger so I came here looking for inspiration.

"Grinding" meat with food processor?

We shared half of a cow with my parents and ended up with 4 big sirloin roasts that we weren't anticipating. I'd like to make fajitas with some of it but I'd like to grind the rest. I don't want to spend the money for the Kitchen Aid grinder attachment if I don't have to. Any luck with grinding meat in a food processor? Maybe a thick chop and making chunky beef tacos out of it?

For $20 or less you can pick up a Lodge cast iron at Wal Mart and see how you like it. I like my cast iron for pancakes, to sear steaks and pork chops (then directly into the oven if need be), to cook veggies for fajitas, burgers. Sure you can cook all that stuff in other pans, but I really like how they turn out in cast iron.

Dutch ovens: enameled cast iron vs stainless steel

I have both. It's nice to have both but if I had to choose only one I'd pick the enameled cast iron. I like to use the All Clad on the stove top only, if I'm going to put something in the oven, I prefer my Le Creuset. I like the All Clad because it's lighter weight and therefore easier to handle and wash. I disagree with those that say 7.25 qt is too large. That's probably the smallest size I'd pick if I were to buy only one dutch oven (I have 4).

Maybe do a compromise, buy a Lodge enameled dutch oven AND the All Clad? That way you get the best of both worlds without have to buy two high end pieces. If you like to cook, I guarantee you'll find yourself using both of them.

Pan hot, fish dried, but STILL sticking to pan

I actually get a good brown sear using a non stick. I put my electric burner on 7 out of 10, let it pre heat, add some avocado oil and then cook it. I don't think you should let the oil start smoking. Once it's smoking you're past the smoke point and the oil is degraded. I do believe olive oil was shown to become carcinogenic after it's over heated. I know you used grapeseed oil but I still wouldn't heat the oil to smoking.

We did a similar trip but for the most part we cooked at "home" and had wonderful seafood daily. Of the few meals we ate out, brunch at Poogan's Porch in in Charleston was our favorite.
