Favourite savoury meals with orange?

Last night I caramelized some sweet onions in butter then added orange juice and let reduce by about half finished with a touch of grandmarnier and chopped flat leaf parsley and served over grilled salmon. We really liked it.

I love the Peugeot grinders too! I got mine at the Le Creuset Outlet store in the Tulalip Outlet Mall. I don't remember the exact price but know it was less than Sur La Table.

Use for creamy garlic salad dressing???

While in college my son worked at a chain pizza restaurant and he said that the sauce for their Gourmet Chicken Garlic Pizza was just ranch dressing with lots of chopped garlic. I'll bet your dressing would work for that.

FoodNetwork.com has some good ideas. Just do a topic search for "cooking with kids". Emeril did a segment on making pinwheels with kids. It looked easy and fun. I believe he also did a fruit smoothie to go with the pinwheels.

Favorite Dinner of Seduction......

My personal favorite is a couple dozen oysters grilled just until they pop, melted butter, crusty bread and a nicely chilled bottle of Sauvignon Blanc. The hubs and my favorite thing to do on the first warm day of spring.

Perfect hard boiled eggs

Sometimes there is a greenish ring around hard-cooked egg yolks. It is the result of sulfur and iron compounds in the egg reacting at the surface of the yolk. It may occur when eggs are overcooked or when there is a high amount of iron in the cooking water. Although the color may be a bit unappealing, the eggs are still wholesome and nutritious and their flavor is unaffected. Greenish yolks can best be avoided by using the proper cooking time and temperature and by rapidly cooling the cooked eggs.

Occasionally several concentric green rings may be seen in hard-cooked egg yolks. A yolk develops within the hen in rings. Iron in the hen's feed or water as the rings are formed may cause this coloring.

Easter Menus

We're having roasted cornish hens with wild rice and apricot stuffing, glazed carrots, roasted asparagus with parm., mini brioche, deviled eggs and a lemon tart for desert.

I'm brining the hens which I haven't done before so I'm anxious to see and taste the results.

cornbread "bread" pudding....good idea?

I found the recipe online so I'll just post the link. I usually do this whole presentation but also have made the cornbread pudding on it's own for a side. I usually just use a cornbread mix and haven't tried his recipe for homemade. Hope you like it! :)

Vetter, I agree about Soupon's! I'm in Mount Vernon but grew up in Bellingham. Whenever I'm up there to visit my sis we lunch at Soupon's. I LOVE their Holy Basil with chicken!

Cooking with a Costco rotisserie chicken

I love those Costco chickens. They are so versatile (obviously from your posts)...all great ideas. I've been making stock with the carcass adding onion, celery, garlic, peppercorns, herbs and a clove. I don't add salt because I find rotisserie chickens a little on the salty side. I have a simmer burner on my gas cooktop so I let it go all night. It makes a really rich, dark stock.

You could try adding a bit of the puree to a fruit smoothie...beets are sweet and the color would be great!

Rose

I've read several sources that say all roses are edible. My neighbor grows the old type red "rugosa" rose for the petals and hips. Be sure you don't use spray on the roses you want to cook/flavor with.

Everyone's meal sounds wonderful. I love getting ideas for everyday dinners.

We're having pan fried pork chops and onions, simmered with a little apple juice concentrate and chicken stock...oven fried sweet potatoes and steamed green beans.

Leftover celery...how do you use it up?

You can cut off the tops and stalks, freeze them, and use in soup/stocks or as part of the aromatics for the cavity of any poultry, then roast. I also keep a bag of mirepoix in the freezer for busy days.
