You guys hooked me up with the best way to keep ginger fresh (in the freezer), what about lettuce? I can't ever eat a whole head before it goes bad. Any tips?

What's your favorite food related blog and why?

Mojito time!

My best recipe for a traditional Mojito is this:
1 tablespoon "suger in the raw" cane sugar crystals
3 to 4 mint leaves (depends on size, also prefer "vanilla mint" to regular)
zest of 1/2 a lime

Muddle until the mint leaves are mostly if not complete broken down.

add juice of 1/2 lime and mix with sugar to start breaking down sugar.

add 1.5 ounces of rum (I prefer bacardi carta blanca superior)
top off with soda water

I've been to the bar in Havana that suposedly invented the mojito, this is close (except for the vanilla mint and the lime zest) to their recipe. They use Havana Club 15 though.

Skirt Steak...Revisited...All is Good with the World...

How did the cooking method change the second time from the first? In my experience, cooking method and the execution thereof is more important than marinade when it comes to tenderness.\

I use the good eats method of cooking skirt steak. Lay it straight on the coals for 1 minute a side. Works for me!

I'm going to do 3 large mason jars worth of pickles. I'm looking do something sweet, something sour (dill maybe), and something hot and sweet, but I need recipes. I'm getting the cucumbers tomorrow from a local farmer.

Help! I'm a pickle virgin (*snicker*)!

Need a good dry rub for Tri Tip...

My version of a southern style bbq, great for smoking with apple wood (what I always use with everything).

6 parts brown suger
2 parts fresh minced garlic (straight out of a press is what I do)
1 part cumin
1 part paprika
1 part chipotle powder
1 part Adobo powder
1 part salt (kosher is best, can use as much as 3 parts)
1 part black pepper (fresh ground)
1 part white pepper
1 part mustard seed

I feel bad buying $.10 of fresh ginger at the store, but that's all I use in a week, if I'm lucky. How do you guys keep your fresh ginger, um. . . fresh?

What about a Parisian style panini? When I was in paris they were all over and most of them were mozzarella and chicken with basil and the bread was rubbed with tomatoes and drizzled in olive oil (ah, parisian street food).

Also, you need some Kronenburg 1664 and some Birra Peroni for sure.

mexican beer

Negra Modelo is the best (IMO) widely available in the US mexican beer. Try it with some Mole or a good green chili and just try to tell me you don't want to move to Mexico tomorrow.

High End - Classy Chinese Restaurant in San Francisco...where to find?

It's not "chinese", but South East Asian, but one of my favorites in SF is the E&O Trading Company. Seriously good eats last time I was there. And it's easily a $100+/person type place.
