The Biggest Chinese Restaurant in the World - doc film

I just watched the Part 1 of 4 installments last night on Sundance Channel. This film, produced by BBC, obviously is timed to air as part of the Beijing Olympic fever.

The Part 1 just shows a glimpse of its foundation - the mix of old-school philosophy and taking advantage of new economic trend. - that carries this massive day-to-day operation. Also shown is a quite graphic scenes from 'cooking competition' amongst its chefs: Something you probably won't see on regular TV (especially on Food TV Network!) of which I'm positive that PETA won't approve.

I'm not sure how the entire film will turn out to be, but am willing to watch them all. The 30 minutes segment is broadcasted on Monday night at 9pm, and repeated on Thursday evening at 7pm (please check the Suncance Channel scheduling).

"kappabashi" knife shop

I think the store in question is called Union Commerce. The corner store (the main HQ) carries all kinds of coffee and tea related gadgets. The store next to it carries array of knives. Every time I visit Tokyo I make sure to stop by at the Kappabashi Street. The knife shop is my favorite. The company website is:

http://www.unioncommerce.co.jp/

It says to e-mail your inquiry. I hope this is the one you're looking for...good luck!

Ichiran Ramen Greenpoint

Ever since I learned that this shop maybe opening in my neighborhood, I've been fantasizing its Grand Opening Day. However, as far as I can tell the 'gate half open' situation hasn't changed for the past few months...
It's a torture!

Best thing to do with whole sardines...

I think it's the method called 'escabeche'. In Japan we make a similar dish called 'Nanban-zuke', commonly using fried fish and chicken but other protein as well. The marinade is a mixture of soy sauce, rice vinegar, a little bit of sugar - so it's sweet & tangy. When I buy a monkfish liver from the Farmers Market, this is what I make.

Do chowhounds prefer to cook or clean?

The rule of the house is: one cooks, the other cleans. However I often end up cooking AND cleaning. I find it quite peaceful & reflective to wash the pots/pans/dishes by hand (we don't have a dishwasher). I hope I'm not the only one feels this way...

Who Stayed In and What Did You Make For NYE?

Hi everyone; long time reader but first time posting to this site. Our NYE dinner was a "Toshikoshi Soba", a Japanese tradition of eating soba noodles for health & longevity. If we are not away from home, that's always the meal for us.
