Duck breasts -- how do you prepare them?

I do a Raspberry Duck, from Laura Calder of the Foodnetwork. It's really tasty and easy.

Brining turkeys- a messy waste of time?

Why can't you make gravy out of the drippings?

Looking for paneer!

Make your own, it's looks to be super simple. The Spice Godess on the FN did this and my first thought is WOW, how simple was that!!!

foods you ate as a kid (or young adult) that you wouldn't eat now?

I'm not sure why or how I did this but I would eat raw bacon, just pull a strip off straight out of the fridge. Don't think my family knew because I don't think it would have been allowed. YUCK

is it possible to dry age beef at home?

I have the same problem. I have a prime rib in the fridge now at 17 days. I think grilled steaks are on the menu this week.

ipsedixit, what is the longest you have waited before using the beef?

mail order food [moved from Ontario]

Are there any online mail order food sites that people have used. Have there been any problems with delivery, or the quality of the food or anything else that you could tell me about.

Would love to find a source for things like green peppercorns in brine, truffle paste, duck breast, etc.

I know that the SLM has these items and much more, but, they don't seem to have them all the time.

Thanks so much for the help. Maxine

Leaving for Puerto Vallarta in a couple of weeks. What would you bring back with you, vanilla beans, dried chile peppers? Anything at all?

Trip to Buffalo N.Y. what grocery items would you bring back? (moved from Ontario board)

We had a wonderful time, lots of laughing going on! Went shopping for other things too and yes, we could barely see out the back window. As far as food stuff brought back, it was alot of cheese, hot dogs, booze, Ghiradelli brownie mixes, smoked paprika; for some reason I have a hard time finding it where I shop in Toronto and butter. Oh, we did stop at The Cheescake Factory for cheesecake to go.

By the time we got to our grocery shopping we were a little tired so we did not really spend time looking for things not on our list. If there was a food find to be had I missed it.

If children are a concern around a cook top, have you looked into induction cooktops?

Trip to Buffalo N.Y. what grocery items would you bring back? (moved from Ontario board)

I'm going to Buffalo N.Y. in early Oct. and was looking to do some grocery shopping for things that I can't get here in Toronto. An example would be frozen pearl onions and oyster crackers. What would you bring back because you can't find it here?

Combination microwave/normal ovens?

20 years ago I bought a Quasar micro/convection oven and still have it and use it everyday. For 15 of those years it was the only oven I had and did not miss a full size until my kids got big and I needed to cook more food. The micro part works just like any other microwave oven. The convection part of the oven work more like a regular oven. I roast chicken, bake cookies and cakes, do frozen pizzas in there with the same results as a regular oven. I also use it as a warming oven, almost everyday. The only drawback would be size. I would not do without, and as a matter of fact when I get my new kitchen (soon I hope!) if I can't find a new model I will incorporate this one into the design.
Hope this helps.

Best tasting canned tomatoes? [moved from Home Cooking board]

I always buy tomatoes with NO citric acid, I find they don't taste as harsh.

Frozen Artichokes and Pearl Onions

I spent months looking for frozen pearl onions in any supermarket I passed in Toronto and was not successful. Sooooo on my next trip to the states I bought 5 bags packed them on ice in a thermal bag and drove them home. I love these things! so any time I am going south of the border from now on I will be bringing back frozen pearl onions.

If I'm going to use a finishing salt should I salt the dish as I'm cooking it in addition to the finishing salt?

Scrambled eggs add-ins

Daughter and I would sprinkle on something call "Aromat". Knorr Swiss made it, but we have not seen it on the shelves for 1 - 2 years now. I miss it! Eggs were just great!
