Tapas & Drinks in Madrid and Sevilla

I'm from the States and will be heading out to Madrid and Sevilla on 26/5/07. I don't want to make a fool of myself..so I must ask..what's the proper way to "Tapiar"? When we walk into a restaurant, will it be self explanatory or will we look like deer in headlights and not know what to do??? I speak Spanish, so I doubt the language will be too much of a barrier. Although our Spanish is not the same, I'm sure we'll be ok. I do have to say I will be staying away from the "orejas." Any bit of advice would help. We are also spending the day in Toledo. Any restaurant recommendations? Also, I know Sangria is the total tourist thing to order, so I won't be ordering that. What's a good typical Spanish drink? Thanks!

Palermo's is horrible. Their minestrone soup tastes as if it's from the can. Sorry, but I hated it.

I hope you didn't go yet...YOU MUST GO TO the "Original Pancake House" in Anaheim off Lincoln. Address: 1418 E Lincoln Ave, Anaheim, CA, (714) 535-9815. Trust me, I'm not a huge breakfast person, but I'm addicted to this place. Definitely worth checking out. They have awesome potato pancakes, banana pancakes, blueberry pancakes are to die for and they have these crepes filled with sourcream and covered in a grand marnier/orange sauce that is simply amazing. They also have an excellent cornbeef hash. This place only opens for breakfast and closes at 2:00 p.m., so you know it has to be good!

Looking for a really good sushi experience~~

Boss Sushi off La Cienega and Wilshire is my ultimate favorite sushi spot. Must have the red snapper, albacore tataki and wasabi tuna sushi (it will make you scream). They add sauces, citrus oils and vinaigrettes that make my mouth water just thinking about it. Could usually get out of there for $110 for two, including tip, drinks (Sapporro) and a wonderful tempura ice cream that we must always have for dessert. When possible we like to sit with Tom at the sush bar. Free parking in the back lot.
