I also had the Spaghetti with clams excellent just enough to feel relaxed not like some places that pile up a pound pf pasta until you burst. Their patio is open now and they have a nice wood stone oven popping out pizzas and etc.

Hi Let us know I am from RI and each year we go to Umass Amherst to conduct a chefs training and have dinners in North Hampton. In RI there are no good/safe Asian restaurants to have dinner so we await your report.

Oysters in bulk in Providence, RI?
Malpeque's and Wellfleets are in good supply. A 100 oysters depending on the size is 100 to the bushel. Foley fish in New Bedford which is only about a 35 min ride from Providence are major wholesale/retail.
Portuguese in Providence
Although not in Prov. but in East Prov about 4 miles away is ODinis being italian and growing up in a Portuguese neighborhood this place IMO is the best in Portuguese food Its fun small and you will love it.

This might be a year old but try TSK simple american cuisine pushed up a bit. it could seem a bit pricy but the food is so well prepared and never look for over flowed plates. They had an excellent soft shell crab so fresh you could still taste the salty water and their short ribs with one not even 1 gram of fat were prepared the same way with chewy Maitake Mushrooms. Then flip over the bridge to Jamestown to the new restaurant called Fish you wont be sorry.

Totally agree with Fjm Fat Bellies is a fun place typical food nice burgers pizzas noisy but clean fun. Mikes is just typical italian food people talk about Polenta all it is cream of wheat made from corn. A 5 year old kid can make it they pile it up so it will last 3 more meals when you get home.

I have been there once but when the weather breaks Fish has an outside patio holding about 100 people with the most beautiful granite bar and Oregon Wood Oven for small plates. Check it out for dinner its a bit pricey and the portions are not huge.
How is Wright's Chicken Farm?

Wrights farm is a typical RI insitiution. I have been there twice in my life and about 6 months ago I felt a chicken day. The place holds around 1,200 people more or less its a cash operation thats why they can keep prices down. Its chicken the salad and FF the pasta you can keep it. But the way the place is run its for families who in the past 5 years with the economy in the dumps a family of 4or 5 or more can all you can eat for around $10.00 McDonalds garbage would be $6-$7 dollars. Its turn them and flip them in and out. You cant screw up FF the salad will vary depending how much dressing they put on it and the chicken is chicken. The place is clean which in a few restaurants in RI is not the case. SO its people who would love to take the family out to dinner on a budget.
best corned beef to buy?

I was taught many years ago before I got into this business was to rinse off the corned beef as we wash all meats before we use them. Then cover with a little water to one quick boil then you would see a scum raise to the top by slowly doing this the grains if the meat wont sieze up so more salt can leech out, then drain off fill witl a can of dark beer with its bitter taste will make it way less salty. Then I just simmer using a probe when it hits 200 degrees internal its done. Plus the liquid left over is great for root vegetables like carrots, turnips, celeriac, parsnips.

I was there once it was busy but the ran out of clams so foolish me had the fish and another person had clam strips. Which look like the same stuff I use for fishing for Fluke. Needless to say been there once. never to return plus sthere was some questionable sanitation questions I dont feel comfortable with

They have 2 types one with the nitrates and one just salt which looks kind of drab but the flavor to me is better. Another thing we did to cun the sodium back is just rinse the piece off in cold water. just cover it barely bring to one quick boil then drain off and start with the spices of your choice and simmer it at around 165-175 degrees. You can jab it but just using a meat thermometer and when it hits 200 degrees its done Thats what we do even when we BBQ brisket the collegan breaks down.

Actually slow cookers do a great job on corned beef. but it will take more time. I do it Sous Vide at 68c for 20 hours the meat gets super tender, the collagen doesnt become rubbery it slices well tight grained beef can be super sliced thin which is good for sandwiches

Pearl Brand. Made in Mass. both with Nitrates and the old world style just salt and spices. Other than the drab color after its cooked the old world is better if anyone is concerned of nitrates. Plus it has a nice trim espically the flat piece. Hummels IMO is very salty after its cooked.

I have never heard of Tilapia being used in Ceviche. The better restaurants use small scallops and Mahi Mahi. Asking Prov Oyster Bar to make it like trying to hit the lottery

Where ever you get them ask for the center cut only about 4 pieces should yield you about 4 ounces of marrow.

Make it. Its not hard its just a couple of simple techniques. I work with a Chef from Lima Peru and she makes it outstanding then they shoot the liquid after they eat the Ceviche its called Tiger's Milk
Frozen Shrimp
Be careful and read the bag of shrimp in the markets. They load them up with STP. which is used in soaps and additives. it keeps the shrimp plump but is bad for you. plus it raised havoc on the flavor. so just read the ingredients.
Sausage Casings and Back Fat Near Providence?
Stop and Shop sells casings they are the small 1 1/2" size good for about 20 pounds of sausage. If you want Beef Middles or Bungs, Westerly Packing has them. they are the biggest sausage and dried sausage producer in RI. Unless your looking to make things like Capacola, or Soupy then have those size casings. If you need fat bck for sausage just use pork butts they are about 25% fat. to lean.

I love Siena I usually go to the one in EG just for parking reasons. But I have to say Anthonys Tagliatelle Bolognese is the best I have had and I can say when I was in Bologna I think his was just as or even a bit better. Try the Arincani if you like Risotto.

Nuovo, Siena, Gracies all IMO excellent but I was under the influence you wanted Italian. Siena in East Greenwich is easier to get around. Federal Hill can be a nut house. Yes Capriccios is a bit stuffy but for service and attention to detail nothing better. Real Italian food is simple if you have been to Italy you can attest to this, In most restaurants espically in RI they try to up it to the point where is sometimes it becomes not traditional and its not the fault of the restaurants its what the patron drives. The restaurant business is for the most part driven by the customer in Europe they dont wander much from tradition.

La Masseria was good when they first opened. All the chefs went back to NY. I just used up my gift certificate and the food was just typical italian restaurant food with the staff doing you a favor. Thats why do a drive by and the place is half empty. Your in the USA restaurants are designed to turn and burn not like Italy. If you want decent food, great service and nice ambiance try Capriccos in the city. If you want simple typical real italian food try Venda for lunch. Sal is right from Naples and serves the real thing.
Leaf Lard near Providence/Worcester?
If your looking for 1 pound blocks. Stop and Shop has it or JAR Baking supply in Lincoln RI. You cant beat leaf lard but We find Plugra unsalted butter is just as good.
