There is no such thing as "fresh" hot pot meat. How do you think they get them sliced that thin? They're all previously frozen. It's just the ones you eat at a restaurant have been thawed out.

No, I mean the dried ones so I can incorporate them into a 3 pepper mix for my grinder. The packaged mixes are expensive and have mostly black "filler".

Molecular Gastronomy in GTA

Having been in the kitchen at Yours Truly, I don't recall seeing any MG techniques used at all. Although that was a month ago and perhaps there may be new dishes. I did not see any emulsifiers, liquid nitrogen or immersion circulators. It's a very tiny kitchen.

Once again the city of Toronto screws up a good thing. How can they have the audacity to think of themselves as a world class city when they continually do everything to fall behind everyone else. I can't think of any other city that is so mired in bureaucracy. If Vancouver can let a food truck park on the sidewalk then surely they can let one be on PRIVATE PROPERTY. I got a reply that the 84% butter is available at Oliffe's, and The Healthy Butcher.
I just picked it up from from Oliffe's. $9 for a half pound.

Vosges Chocolate?

Don't expect to taste bacon in the bacon bar. I picked up some direct at the Vosges shop in NYC. The bacon comes across as salty bits in the chocolate. Barely enough there to get any taste of bacon.

Well last time I was at Wegman's all they had was President butter, the rest was ordinary grocery store butter. No Echire. I saw Echire over the summer at Dean & Deluca in NY but I didn't bother thinking I could get it at SLM.

Where can I find Echire butter? I used to see it at SLM but none of the cheese shops carry it any more. Even the place I first got it in Montreal (Atwater Market) no longer had it when I went back in October. I'm wondering if perhaps the authorities have clamped down on importing it??

I've got a friend heading to Montego Bay this weekend. I was thinking of asking them to pick up some Blue Mountain coffee. Where's the cheapest place to get authentic blue mountain? On one hand if you buy at the resort or the airport you'll likely get the real stuff but you'll be paying tourist trap prices. You buy offsite and who knows what kind of stuff it really is.

The courtyard is closed for the winter. There is a small adajecent room off the main dining room that can be used for private functions. It might be able to handle 25 guests. There are also the meeting rooms for Verity, the adjacent women's club that is owned by the same owners. They might be able to arrange one of those as well.

Chicken Pot Pie that I can pass off as my own

Not for chicken. Too dry and not much veg. Just chunks of breast meat. I think a pie should have a good ratio of meat, veg and gravy.

You guys do realize Trump himself has nothing to do with this building? He's just licensing his name/brand to a developer. Todd Clarmo was also the EC behind the failed Oasi that took over the old Mildred Pierce space.

I would avoid this place on any busy night. I went to the new operation two weeks ago on a Sunday night. The service was absolutely non existant. I stood at the door for 10 minutes before someone asked how many were in my party (I was alone, no one else waiting at the door). After I indicated "1", she takes the menu and passes it off to the guy behind the cashier. He takes over and looks around see that there aren't any open seats and asks me to wait a few minutes. 30 seconds later, 3 tables leave and empty out. I wait another 5 minutes and I have to go back to him to remind him as he's forgotten about me already! During this whole time I was the only person waiting at the door.

To keep a long story short, service was absolutely in chaos. Supremely understaffed. 4 waiters covering the whole restaurant and stepping over each other. Every table I could see had to flag them down to ask for something. To compound this nightmare, there happened to be a person who needed hand holding to be guided through the menu. It was like she never ate asian food before. Asking the most basic questions and tying up that waiter for 10-15 minutes. I had to ask twice for my bill!

They don't even have a computer system to take orders. All orders are written by hand. The food is great but they have severely bitten off more than they can chew. Just because you run a food court stall doesn't mean you can run a restaurant.
