I'd use a heavy flat pan and maybe use this technique (it's a little odd but the results are good if you want to strictly use a pan/stovetop):

Range Hood vs OTR Microwave

Absolutely go with vent with external ductwork imo. Maybe use a microwave cabinet (if you have room) to free up some counter space.

Cracked Granite. They say normal. I say BS. What do you think??

Why is there mesh material glued to the bottom of the stone then... is that normal? Our granite doesn't have that nor does anyone's else I've noticed. It's there to repair the CRACK in the stone. Don't settle for anything less than full replacement. I went through something similar and it was a headache but get it done right.

That's how I felt about it. It almost seemed like an orange vodka to me.

We had a similar experience. It definitely was loud and the meal took forever to get through (I'm not sure if the delays in the food was service or the kitchen or a combo of both). We tried about a 6 different things at our table; a couple were pretty good and the rest just okay. That being said we'd probably go back since it's still new to us, local and there are some other things on the menu i'd like to try. Aside from the amount of time it took, it was a relatively positive experience.

best easy roast chicken method?

If I were gong to add some potatoes to the Keller approach (chicken into a pan @450 for about an hour), what would be the best way to incorporate them? I'm thinking about waiting for about 30 minutes for some of the fat to render then adding some red potatoes in that have been halved or quartered?

Thanks for the great response. Figured I'd post a follow up in case anyone was interested. Made the recipe over the weekend. There were five of us (though one vegetarian so I was compelled to double up their serving). Had just barely enough imo; I think next time I'd bump up the recipe because they were delicious and I'm sure I wasn't the only one who would have enjoyed another spoonful or two. I did add a bit more water than the recipe called for to adjust it to the consistency I was looking for. Thanks again.

Besh's Creamy Polenta Recipe

I'm considering making this recipe but I have a couple concerns/questions.

For 6 servings the recipe calls for 1/2 cup of polenta, 2 cups of water. Is that going to be enough for six servings? Doesn't seem like a lot to me.

Also, the recipe calls for stirring in the polenta after the water has come to a boil, reducing to a simmer, then cooking for 30 minutes with the lid off. Should they be stirred during this 30 minutes?

I'm kinda an amateur with short ribs but 400 seem pretty high to me.

I've had great success with John Besh's recipe.

Risotto or polenta are sides that work pretty well.

I'm a fan of Dale Degroff's method of equal parts sugar/water shaken up using no heat. It seems to take all the variable out and make a consistent ingredient.

Negroni construction

Equal parts stirred on the rocks with and orange peel (flamed occasionally).

If I'm having one up the amount of gin is usually at least doubled.

I think both of these statements are pretty much false. Any home built to code can handle the extra weight, and while some stone needs may to be sealed there are others that do not.

It's not very good. Maybe try Ollie Klien's (also not particularly great but better than the Sandbar and more in tune with what you're looking for).

Nice restaurant for 90th birthday-Monmouth County

Agree with Shipwreck being one of the better places in the area if you're willing to drive about 10-15 minutes more south. I really like Brandls but it seems not everyone agrees with me (and it is kinda noisy).

Whispers is Spring Lake might be good... definitely is geared to a more older clientele. I think it's a bit overpriced for what you get but I've had some good meals there.
