The Great Dairy Dilemma

Sorry for the dramatic title.
I'm going to Hokkaido for 10 days in the middle of Aug. I'm really excited to experience its culinary bounty. And having lived in Kyoto for a little over a year now, I'm especially excited to finally get my hands on some decent dairy.
So the question is; Can anyone recommend any meccas of milk, capitals of cultured curds?

I'm pretty much determined to stay out of the big cities and stick to towns and the countryside but I can be swayed. Also, if you know of any other foodie treasure troves that you simply cant keep to yourself, I would delight in hearing about them.

Carnitas Recipe

Does anyone know any carnitas recipes that use more "exotic" spices or chilies? i know the beauty of carnitas' simplicity but i still have an urge to get my foodie on and throw in some guajillos or anchos or annato seed or something.

Molineros Wanted

My friends and I brought some delicious blue corn back from Mexico and we want to turn it into tortillas. In Mexico there are businesses called molineros that house a number of grinding devices (molinos) in which one can grind anything from chocolaye ingredients to corn for masa to the desired consistency. Please tell me one of these places exists in the bay somewhere!

Disposal of fry oil [moved from L.A. board]

I read elsewhere on CH that in the Bay Area you can freeze used fry oil in a paper milk carton and toss the whole thing in the green (compost) bin. Is this true here as well? Otherwise I would just seal it in a jar and toss it in the black bin.

Hello

Im trying to have a sushi making party tomorrow and want some fish for raw use. Off the top of my head I can only think of ahi but I'm sure there are many kinds of good sushi fish(recommendations?). I live on the west side so I assume that an oceanside venue is the best place to find fish. Where's the best place to buy the fish? Also, what are some fish types to avoid due to their mercury etc?

Good idea Serv. Actually I haven't many restaurant risottos. I had a seafood-squid ink risotto at one of Bobby Flay's places in NY that I thought was too heavy. My favorite risotto experience was a white bean risotto that i got at Pico in Larkspur (Marin County). It was simply flavored with farm-fresh ingredients and had a perfect texture. I love risotto's with a medium viscocity and nice al dente texture to the grains. Lately I've been making springy risottos like fennel-lemon and asparagus shiitake. I love my own but i want to see how the pros do it.

Where to eat...Good quality meat

Hello, My name is whimzerd and I'm a recovering vegetarian. HAHAHA

I'm just getting back into eat animals again and there are so many tasty options but I don't want to support factory farms and animal abuse. Where are some places that have good quality meat i.e. grass fed beef, high quality seafood, small ranched goat, etc. I'd like to know of both the upscale and moderately priced.

TEJATE: This magical potion of cacao, maize, rosita de cacao(flowers of a Oaxacan tree), and mamey(fruit) seed is available on sat & sun. Although it is not as amazing as drinking it in Mx it is some of the best in L.A. The cacao and flowers provide a calming yet stimulating effect, the mamey seed binds to the cacao fat to create a natural "whipped cream," and the maize sustains you. What's not to like?

I love all types of Indian food and i also love high quality ingredients(farmers market, organic, etc). Are there any Indian restaurants out there (preferably between Santa Monica and Silver Lake) that use high quality produce and/or meat?
