What kind of vinegars do you keep on hand?

I think you are probably right - if by "fairly recent" you mean about ten years or so. I am pretty sure I have been using it at least that long. And, I like the idea of calling it "brown"

What kind of vinegars do you keep on hand?

when people say "balsamic" do they mean only red balsamic? I am not too fond of red balsamic, but I love white balsamic in a vinaigrette, although I only use red for tomato mozzarella salad. Something about drizzling to me requires red balsamic. I have found that many good cooks do not know about white balsamic

serving seared tuna

Thinking chimichurri, but definitely wouldn't sauce until I am ready to serve. Just trying to avoid having to do a lot of cooking (I know searing tuna is not a lot - but there are a lot of pple) during the meal.

I want to serve seared tuna for a dinner party. I want to cook it slightly in advance (an hour or two) and then serve it at room temp. Will the fish go bad sitting on the counter for an hour after being seared?

Gotham/Gramercy Tavern/Annisa/Union Square cafe - which one this time?

I don't know why no one is responding regarding Annisa which is my favorite of all of them. I don't know why OP finds it intimidating. I think the servers are great - and usually you can chat with Anita Lo herself. As to portion size, I am not a very big eater, but I have taken many people (including large men) here and no one has complained. I think it is the most interesting of the restaurants you have mentioned.

Interesting. I have been to both now and I am curious as to why you say this. We have always shared at Zabb Elee without problems. Menu at ZE is much bigger, more choices, although I don't necessarily think that is a good thing. Loved Somtum Der and I think the atmosphere is a little nicer.

New job at 48th and Madison

have to give a shout out to brick lane curry. we had a group on and a reservation at the 52nd st branch. arrived and they had an emergency shut down. they called the 93rd st branch to honor our groupon and gave us a credit for the cab fare to get there. Could not have been nicer, really went the extra yard.

Mother kicked out of restaurant for changing baby's diaper at table.

There are many "kids" who don't wear diapers. There is a difference btw kids and babies. BTW, I was in the situation once where my grandson, then under 2, needed to have his diaper changed in a hurry, for the reasons you intimated, and my daughter in law took him out to the mini-van. He created a scene in the parking lot - better than in the restaurant. I would have been pretty upset if she changed him at the table - and he is my grandson.

I eat steaks (and everything else) very rare - black and blue. My daughter in law eats hers medium and can't bear the thought of rare. She also dislikes seafood. So, i started thinking about it, and it is true: many people I know who dislike very rare meat also dislike seafood. She says it is a texture thing. Thoughts?

Uses for Duck Fat

Bouley Lunch Tasting Menu Review: Best Fine Dining Deal in NYC

This is good to hear. Many years ago (at least ten) a client took me to Bouley's for lunch. It was amazing. In addition to the five courses, they kept throwing in more food. It was one of the most amazing lunches ever - certainly for the price.

we went last week. Loved the oysters and the special of grilled shrimp.we thought the tandoori rabbit was a bit dry. Loved the atmosphere and the staff. Will definitely go back.

No one mentioned Annisa. Anita Lo is a celebrity chef - she has been on Top Chef Masters (and i think something else) and i have frequently seen her at the restaurant.

Personally I am really amazed when I see that people are willing to wait hours for ramen at Ippudo. Hours in NYC when there are at least a dozen other good places to go within walking distance..

I think most people would put Molyvos in the "have to refinance my house" category. Maybe not EMP or Per Se expensive, but there are a lot of steps btw a dinner and Molyvos.
