walnut pesto?
I'm looking for a recipe for walnut pesto too. But, the one I want is just walnuts, no greens or tomatoes. I found it all over Liguria when I was there a couple months ago. The bottle I brough back says "walnut cream" in Italian. The ingredients on the back seem pretty simple (walnuts, garlic, grana padano, olive oil), but I'm doing something wrong.
I read on another board that the problem might be the walnuts we have here aren't very fresh and the water in the nuts gets stale and bitter.
Any help?
Update:
I found the original bottle and saw that I missed a couple of ingredients: anacardi (cashews) and grissimo grattugiato (which I think means "grated breadsticks"). I didn't have either so I used pecans and whole wheat bread. It really helped! I finished it off with some cloudy EVOO that I brought back from Imperia. Yummy!
