Turkey Burger seasonings and moisteners
Recently made turkey burgers with chopped fresh spinach, feta, and sun-dried tomatoes mixed into the patties. Yum. Good with a yogurt sauce.
Where can I buy Branzino in Houston?
I've seen Branzino at Phoenicia market, on Westheimer between Kirkwood and Dairy Ashford.

I live about 15 minutes from that place. Have not been there yet, and after seeing that story, never will. I'll let you know when I see that they have gone out of business.

From west Philly and Delco, left town 1984, the standard cheese back then was white american; provolone you had to ask for. Don't understand the wiz mania.
one day in la area
Although not a local, I spent several days in Redondo Beach recently. Two places that we enjoyed: The Standing Room is a counter in the back of a liquor store, so takeout only, but we had excellent burgers, the non-burger items looked interesting and inexpensive. Thai Dishes on PCH, really good pad kee mow and papaya salad, probably the best I've had outside of Bangkok. Not much ambience at either place, though, more hole-in-the-wall.
Need red and green NM chiles
Got several large bags of powdered chiles, medium and hot, at Ristraman Chile Co. in Las Cruces. They didn't have any powdered green, but got some in a shop connected to Andele restaurant in the Mesilla area. Good food at the restaurant too. And my friend in Tucson gave me some fresh chiltepins from a bush in his backyard, those things are hot! Hope to grow some from the seeds.

Thanks for the info. I can get fresh hatch chiles in Houston in season, I'm mostly interested in chile powder and dried pods, a friend brought back big bags from NM last year, really good. Will check out Las Cruces.

Epazote is meant to reduce flatulence, it's a mexican herb often used with beans. It has a somewhat strong taste so it may not fit in with your recipes.
Steaming a whole turkey
Have not steamed one. My choices would be 1) smoke/slow cook whole turkey on Weber or similar kettle grill (as per Butzy) 2) deep-fry whole turkey 3) cut up into pieces and grill over charcoal/wood. Five-kilo perfect size for frying.

I used to keep ketchup in the fridge. For the past few years, I keep large opened (and re-closed) containers of ketchup in the pantry, sometimes for several weeks or more. No problems, fermentation, or off taste.
