Turkey in Mole [split from Chicago]

Super post Richard. Thanks for the info and perspective. And how cool to encounter self-described Stridentists (Estridentistas, who I first heard of in Roberto BolaƱo's novel The Savage Detectives) in a post on mole de guajolote.

So far I've only been able to try the dish at Topolobampo in Chicago (great meat--weak mole) but, with such a rich history, I hope that's only a start.

Turkey in Mole

I'm wondering if any of you who travel the neighborhoods and burbs for the best authentic Mexican food have come across Turkey in Mole, or Mole de Guajolote. In parts of Mexico turkey is common, and it's one of the traditional pairings for mole, but i've had trouble finding any Chicago Mexican Restaurants that serve the dish, as most places substitute chicken for turkey.
