Recommendation: Upscale resto with casual vibe

My friends who are visiting are die-hard Joe Beef devotees. Unfortunately, Joe Beef is out of my price range. I know there are tons of places with great food and a relaxed ambiance.... It's just that I can't think of any right now! I did think of Buvette, but I'd prefer someplace that takes reservations. TIA.

Edit: Homemade charcuterie would be a HUGE plus. (Thanks, SnackHappy, for reminding me!) Le Comptoir is now the front-runner with fantastic charcuterie and a reasonable price. Plus my friends will get a kick out of seeing where they cure the saucisson! Am I forgetting about other similar restos?

Charcuterie Supplies in Montreal

I'm trying to learn more about charcuterie. At the very least, I want to get some pink salt. Maybe a few other things. Does anyone know where I can get these kind of supplies? Someone I know recommended butcher-packer.com, but over there the pink salt is $2 and the shipping is $7.50. But even if I was cool with that, they won't ship to Canada. So, yeah. Local?

I got 2 reservations for the 2011 season. Now I need to decide who to invite along! I would really love to go with one of my best friends, but she is a vegetarian. Is there any chance she'd have a nice meal, or should I just stick with my carnivore friends?

Does anyone have any input about women's chef pants? I agree that quality is a definite factor, but just once, I'd like a pair of pants that fit! (And maybe don't look half bad?) Most of the uniform websites have women's pants, but that tells me nothing! TIA!

Best butcher shops in Montreal

In a few weeks I will start a butchery program. Part of the curriculum is the completion of two stages. I want to compile a list of the best shops in the city so I can decide where to apply. Since I live in St. Henri, I have a good handle on the shops at the Atwater Market. I've also heard good things about Le Maitre Boucher on Monkland, but I don't want to miss any of the other amazing shops out there!

I figure if I'm going to do something this crazy at 32 years of age, I may as well be the best! Thanks so much for your help!

How will my ganache set up?

I'm baking a Boston Cream Pie from a mix from Stonewall Kitchens. Don't ask... Dad was in Maine and bought it for me to bake for him. I said, but I can make it from scratch. He said, but I want this one...

Anyway, it calls for a ganache made from supplied chocolate (I'm guessing 3/4 c), 2 tbsp butter, and 1/2 cup heavy cream. How do you guys think this will set up? I need to refrigerate the cake overnight, so I'll want to cover it. Do you think it will be firm enough to cover, or should I do the ganache tomorrow?

Brilliant! Why did I never think of this??? It also provides a solution for my other freezer meat problem - that horribly uneven roast that the grocery store delivered that one time when I was sick this winter. Thanks!

I agree with both of you. I think the fact that my apartment is 27 degrees today is just upsetting me. I'll just wait for a cool evening and get on with it. Thanks for the idea of doing it more Mexican (my standard is more of an improvised Irish)! Now I'm excited about my stray pack of meat!

Is it possible to make a Springy Stew?

I have a pack of stew meat in my freezer that I never got around to using this winter. I hate to see it go to waste, but I also can't see us eating a hearty bowl of stew when it's this warm! Does anyone have any ideas for me? I really wish I had the Kitchenaid meat grinder attachment...

Well, I've got to say, I love that I've stumbled upon a local controversy! I look forward to reading what people have to say!

And so appropriate: The reason I originally visited was because of a recommendation given to me and my ex on our wedding night. The marriage was very short-lived, and the divorce is controversial to this day (5 years later!)

Chinatown Resto Near American Zoetrope Building

I was last in SF about 5 years ago and I can't remember the name of an amazing little Chinese resto I visited. I remember it being near the American Zoetrope building (Kearny & Columbus). There was a line before they opened, so I imagine it's pretty popular. I also have a vague recollection that the name had something to do with the name of a city, but don't quote me on that!

Regional Specialty Ingredients / Equipment

I'm going to Fort Lauderdale to visit my g'ma (what a sheine maydl!) and I was hoping you all could point me in the direction of any products I may want to pick up while I'm there. (I'll also need to know where to get said products).

I'm visiting from Montreal, so I'll be hitting up the Whole Foods for certain (you wouldn't believe how many ingenious products aren't sold north of the border!).

I'm looking for:
-Everyday ingredients
-Unusual ingredients
-Just plain weird ingredients
-Regional ingredients, including Mexican, Cuban, South American, etc. (Hey it's more regional to FL than Canada!)

Also, what about kitchen electrics? I'm sure I can get a deal someplace on certain electrics (scale, blender, Food Saver, iSi whip, dehydrator, to name a few) I've got my eye on, right?

Also, other miscellaneous equipment: Silpats, ring molds, used restaurant stock, etc.

It's a tall order, but I swear I'd give you thr skinny on Montreal if you asked! ;p
