I guess I'm showing my age. When I grew up in Borough Park, a pumpernickel bag was unheard of and it was those bagel makers to which I referred. Today, there are all kinds of "bagels" to satisfy the masses and where would bagels be without Mr. Lender.

The Calvert House on Rt 1 in Hyattsville used to be very good although its been many years since we ate there.
A question about cooking kosher meat
First, we cook brisket in a slow cooker, then we don't just let the meat cool, we refrigerate it until it is cold before we slice it. After we slice it, we freeze it separate from the liquid and then after defrosting reheat it in the liquid on the day we serve it. Its easy to slice and it comes out great.

While it is true that the Kosher Board focuses on the NY area, other geographical areas including MD/DC/VA are addressed as well.
My other suggestion is that you call Shalom in Wheaton, Shaul's in Silver Spring, and/or the Kosher Mart in Rockville (the 3 kosher markets in the DC area) and ask them.
Nut-Free Charoset
We have a son who has a nut allergy. So we just make 2 versions of the same recipe one with nuts and one without. Leaving out the nuts doesn't change anything except remove the nut crunch.

Last Friday night, we registered at 7:40 at the hostess desk at Joe's Crab Shack at the Rio, were seated at 8:20 (which I did not mind considering that every restaurant at Rio was crowded), but the remainder of the evening was a disaster. It took from 8;20 until 9:20 for the server to take our order and for her to bring any food to our table. To top it off, there were 5 of us and only four food orders arrived and one of the orders that did arrive was wrong and the fries were cold. Moreoever, the appetizer we ordered never showed up at all. The manager did not seem terribly concerned when I finally ran her down, but the general manager was very accomodating. After the general manager went into the kitchen to correct the orders himself, after he brought out the corrected orders, after the server insisted we order a dessert on "her," after she took forever to bring that dessert out, and after we had to wait for the check, we did not get out of there until 10:20. The general manager did strike the appetizer from the bill and deducted another $21.95, but IMHO he should have done more. Needless to say, none of us will ever go back.
BBQ--looking for the best
In general, when discussing chains, you have to distinguish the particular branch at which you ate (which you have done, but which others have not). I think that as far as Red Hot and Blue is concerned that the Laurel restaurant is recognized as the best. Moreover, I would suggest that the Urban BBQ on Rt 108 is far superior to the original in Rockville and especially the one on New Hampshire Avenue. I haven't been impressed with any of the Famous Dave's at which I've eaten, but the one in Germantown seems better than the others.

I guess it is a matter of taste. Pizza Stop, in my opinion, is far superior to Sole D'Italia. Tried the latter when we first moved in to the area 17 years ago and was so totally turned off that I haven't been back.
Hamentaschen in D.C.?
Although I understand that the op was strictly looking at DC and not the MD suburbs, a place in Montgomery County which has not been mentioned is the Pastry Oven in the Kemp Mill Shopping Center in Silver Spring. I pretty sure, based on past experience, that you can get great Hamentaschen there as well.
Clyde's Tower Oaks Lodge (Rockville) - Review
Actually Doc, it was "pgreen" who suggested that there might be a Clyde's in Bethesda not I. In fact, I wasn't referring to a Clyde's in "Bethesda" because I know there isn't one there and, Doc, the Clyde's in Friendship Heights has ample parking (at least in the evening." My comment was to Bethesda in general which I tend to avoid as much as possible because the restaurants are at best no better than others in the County, it is difficult to park, and the service in most restaurants sucks.

I'm with you. Bethesda is a pain in the tush starting with the inavailability of parking to the waits for a table to the mediocre service and food. Tower Oaks has been our go to place for a long time and will continue to be so.
How else can I cook sausage?
You overcook them in a microwave and they come out like a hard salami. Perhaps its a learned taste, but I like them that way. I also do it to turkey salami and it comes out with the texture of bacon and with an enhanced flavor.

Help! Best hamburger in DC?
It hasn't been mentioned yet, but we stopped by Hamburger Hamlet last night and I had a burger imbued with peppercorns. It also had blue cheese and was pretty darned good. Two ther people in our party also had burgers and were also well pleased. BTW, the sweet potato fries were really good too.
