Looking for a pig & spit supplier in North Bay

This might be just the thing. Try: www.greatbbq.ca - he is in Northern Ontario( somewhere in the Temiskaming region). If he cannot help, he will know of someone who can! His contact info is on the site. He has been taught the art of Barbecue from one of the best - Paul Kirk, so he knows what he is doing. Just as an aside, he states that a 100-115 lb hog will feed 80-100 people. I hope this helps.

Although I have not been there for a little while, I used to go there with a friend quite often. This is a bar environment, but is also a fair sized restaurant, with patio in the back, and they make many different types of beer on the premises. Their selection of Scotch used to be quite extensive as well. Just as an aside, the friend that I used to go to this restaurant with now lives in Georgia, and is coming for a visit, and this is his choice of places to go! The food is typical of most pub fare, but the wings always were top notch, and the "Ghetto sauce" is a neat touch - when in brewing country, why not make beer type food sauces too!!

For the chimney, you should be able to get it at any place that sells barbecues. Now, for getting wood-try www.smokinlicious.ca they will most likely have what you need to start you off. both the use of lump charcoal and the use of woods(for heat, and flavour) are personal preference.I hope this helps

Switching from Santoku to Chef knife?

Knife manufacturer is personal preference, as is the length and style of blade. That being said, however, a trip to a kitchen/knife store is in order. Any knife that you use should be comfortable in the hand, and well balanced-so that the knife does the work efficiently. Make sure that any knife that you get has both of these characteristics.
Another thing to look for is whether the "tang" or metal portion of the knife goes right through the center of the handle, or whether the handle is separate.this will determine how well it is made, and how long it will last. Four Star, and Professional "S" knives fron Henckels have a full length "tang" for strength and rigidity. In the case of Global knives, which are all metal, this means nothing.
There are lots of good knife manufacturers out there(Wusthof, J.A Henckels, Global etc....) to choose from. So find a freindly kichen cutlery/tool supplier, and test a bunch out to see what feels comfortable for you-also remember, that longer blades are not always better(if you have small hands...you probably will not be happy with a 12" blade!)

Is it time for a new dishwasher?

Are you using liquid, or tablets for washing? Check to see that there is enough water flow to the unit....no kinked hoses-if they are hoses, not lines. Is there a place in the soap dispenser to put a pre-rinse agent in? Barring that, have the pump checked for output, and the screens cleared.

Klose Pit

Is anyone here on this board lucky enough to have access to, or own a BBQ pit from Klose Pits in Houston TX. I am just trying to get feedback about them..... I figure that if most of the top competitors on the U.S Barbecue Championship circuit use them, and win with them, it is a good testament to the product!!
