Fried chicken to rival Ad Hoc
Yeah, this fried chicken sandwich is incredible. Funny backstory is that the fried chicken sandwich replaced the veggie burger. The staff said the veggie burger was a pain in the ass to make and to add insult to injury to the the vegetarians (unintentionally, of course) they not only replaced the veggie burger with a chicken sandwich, but a chicken sandwich that is fried in bacon fat and served with crispy chicken skin. I'm sorry but this is too funny.
The guy who came up with the dish & the chef at Mission Burger is Danny Bowien. He won the International Pesto Competition in Italy. And he used to or still is the chef at Farina.

Ah, good tip. We did preheat over the burner with the chunks but I'll try the leaves or shavings

The pastrami turned out tasty but too dry. And the crust was not crusty enough. We tried to smoke it using a double pan method. Had the wood chips in the bottom pan. Pan with holes on the bottom on top of that. Put the meat in there. Wrapped in foil and cooked for 3 hours at 200. Hardly any smoke was visible.
We're thinking of just doing a wet braise but that's not pastrami. Need to figure out how to smoke without a traditional smoker

I had a question about your smoking technique. I am trying to make pastrami. I brined it for 4 days, dry rubbed it but I don;t have a smoker. so I put some wood chips in a pan, put a pan with holes on the bottom on top of it and put the meat in there. I covered it with foil and put it in the oven for 3 hours at 200F. But i'm not getting the smoke I want. Any suggestions.
How to smoke Pastrami?
Has anyone made Pastrami at home? I don't have a smoker and I am trying to figure out some creative ways of smoking my meat.

Thanks Cheryl. I meant to buy ancho and somehow ended up with chile de arbol (F*&% me!)
Can I use the dried anchos like chipotles and just tear them up and add them to the brine or is it a lot better if I puree them before I add them?
Also, I'm doing a 4 day brine. Can I leave the anchos in there all 4 days or will that overpower things?

I've been trying to find a way to cook pastrami differently while maintaining the characteristic smoked flavor and tenderness.
I don't have a smoker so I need to find a way to get that smoked flavor and I'm thinking of doing a braise instead of steaming
Michael Ruhlman grilled his pastrami over an open fire instead of smoking and came out with excellent results. Problem is I don't have a grill.
So here is what I came up with to get my pastrami smokey. let me know what you think:
For the smoke, I'm thinking of adding 2 dried chipotles to my brine for a 5lb piece of meat. I'm going to stem them and tear them into pieces and will include the seeds.
Then I was going to sear the outside of the meat and braise it in liquid at 350 for 3 hours. Too hot?
Will a wet braise ruin the nice exterior crust that you expect from pastrami?

Hanukkah Meals in Bay Area Restaurants
I just called my usual spot for Jewish inspired meals, Firefly in Noe Valley, and found out that all they are serving are latkes and brisket (boring!)
Does anyone have any restaurant suggestions besides Max's? I heard there's a spot in Oakland that is serving Jewish dishes but i can't remember the name
