Anyone know where to get pork shanks from? i revently had the crackiling pork shank at maloney and procellis and literally almost passed out because of how good it was. i bneed to try and recreate it but can find a shank anywhere! i looked at probably 7 stores yesterday and had ) luck. Let me know if yo uhave any ideas..

I am making a texas chili and am finding that the top round is a little dry even from stewing for 2.5 hours now. does any one have any input on which stew meat they like better for a dish like this?

you can try it with reserving the liquid and adding it bit by bit as it thickens. You can also let it simmer with the lid off so the liquid will evaporate.
