Thermapen users: how do YOU clean the probe after inserting it in meat that's not done

Just wondering if everyone uses the wipes they sell or some other kind of spray cleaner or sponge and dish soap or what.

I haven't yet come up with the perfect answer :(

Zahtar, sumac and smoked red paprika

I put za'atar and sumac on basically everything. Smoked paprika is really versatile too.
Try putting some sumac in your hummus or sprinkling it on top at the end. gives a nice lemony spice.

Make some flatbread and cover with a paste made of Za'atar and olive oil. Bake as usual.

I pre-ordered this because I loved the program. I feel the book is a great collection of his found recipes from the program.

I learned quite a bit.

Anyone shopped Big Lots for grocery items?

They are a great source for international products too. I get a huge bottle of Tapatio hot sauce there for under $2. The small bottle (when available) at my local grocer is... $4.29

Apple by product from juicing apples,,,,, any Ideas?

definitely add to any baked goods, it's also good as a topping on bread thats been smeared with cream cheese or yogurt, then just roll up.

How long does Miso last?

some packages of Miso paste I've bought have said that it doesn't need to be refrigerated.
Does everyone refrigerate all miso?

I have one package in my cupboard still. Doesn't smell funny. I put the opened bag within a ziploc.

Never let me down again...

I've had this problem with every recipe I've ever tried to make from Heidi Swanson. Either from the 101 cookbooks site or from her cookbook itself.

Every single thing has been a bland disappointment. Probably just me though as her site/book seems very popular so I keep trying recipes and keep getting disappointed. Maybe I'm recipe sadistic.

Help me find baking (half sheet) pans that do not warp

The last to warp were the ones from the restaurant supply store and this thick old cuisinart one I had.

This weekend... both warped. Was only using them in a 350F oven. So confused and frustrated.

yep we have one and I've gone there and bought the thickest gauge they had and... it warped in my oven.

i wonder what kind of gauge i need to avoid warping.

agree about the restaurant supply, i always walk out with strange things i never knew i needed.

thanks but i've tried all the brands outlined in that thread (excepting for the uk ones as I'm in USA) and they have all warped on me.

Exactly what the title says.
I've tried various types and thicknesses from the restaurant supply store as well as brand name manufacturers. They seem to all warp, even the thickest ones.

Is there something I am doing wrong to make them warp? Or is this just the luck of the draw?

I'm looking for some new pans that will fit my non-professional (home kitchen sized) oven and normal silpat liners.

Bonus points for someone who can also recommend me good cookie sheets (without sides).

Nope nope and nope. Stuck with just Wegmans and Tops. Wegmans has carrageenan and other trash in it.

HOW much chili sauce?? You're kidding, right?

it's hard to describe, it's a fermented paste made from korean red chilis, fermented soybeans, glutinous rice flour and salt. it's not too hot, but gives a nice flavor and a kick of heat.

idk where you live but I can get it at my regular grocery store in the asian food aisle but all asian grocers seem to carry it. It normally comes in a red tub but Amazon seems to sell a smaller tube of it:

the fish sauce will mellow it out a bit, 2 tablespoons isn't much to me for that much of fried rice.
i probably add more myself.

on the weekend and then just bring in a small container of it with my lunch.

Very important to massage the herbs/oil into the onion and let them sit.

Otherwise I also suggest roasted seaweed (i like the seaweed love brand), somersaults snacks or roasted chickpeas.

Recently got:

The Urban Rajah's Curry Memoirs by Ivor Peters

Rick Stein's India (enjoyed the program on TV so much!)

and the Incredible Spice Men book, just love those guys.

Thinking about picking up Iyars Indian Cooking Unfolded but I already have his 660 curries... so is it worth it?

Oh and also got Levant by Anissa Helou which is grand. Believe Yotam Ottolenghi has a review on the cover.

Pretty Good Number One is in my wishlist! Should I go for it?

try using a service like TunnelBear to watch UK cooking shows. It's a private VPN that's free, basically tricks the video source into thinking you have a UK ip.

I'm totally addicted to UK and Aussie cooking shows.
