Jarred black summer truffle storage Bought a jar (20 g) of whole black summer truffles from Tartufi di Fassia, Tuber aestivum. There is a little liquid in the bottom of the jar. Question that I haven't seen answered in my research - how to store them once opened? Do I need to use them up quickly? |

Thanks! I tasted it I think I'll be okay if I don't deglaze. I'll just make the roux in a separate pan along w/browned onions and add the drippings and broth that I added since I noticed it was dried out. Ughhh! |

Roasting pan dried out! Now bottom is kind of blackened. I added more broth... What should I do about trying to make gravy with drippings? And my turkey stock that I had frozen tasted freezer burned so I tossed it :( |

Pre-Thanksgiving appetizer, maybe with cranberry? Try phyllo cups with brie and cranberry. Trader Joe's makes something similar, but easy enough to do homemade. |

Some Thanksgiving Turkey Suggestions Needed.......... I have wet-brined, dry-brined, had fresh turkeys, frozen turkeys, cooked upside down, covered with cheesecloth, covered with bacon, etc.... Family favorite is always cheap frozen with herbed butter under the skin, s&p on top. This year I am trying a Kosher turkey per friend's suggestion; heard it's juicier/moister. |

Business Dinner in South Beach Looking for a steakhouse alternative for group of 8 men. Already having one meal at Scarpetta. Thought of Casa Tua - but is it more a couples type place? Also considered Joe's Stone Crab. Would like great food, service and atmosphere that can handle group of guys. Also need to consider driving distance b/c not renting cars. Walking distance would be great, but other than Fontainbleu, where they're staying, couldn't find anything myself that fit the bill. Casa Tua looks to be an easy cab ride, but not sure. Fun Restaurant for 50th Birthday - party of 25 Thanks for all the input! Also now considering places with a patio since I'm looking at June - Dante and Gaslight were suggested. While neither have live music, since it will hopefully be nice we can walk elsewhere for dancing. Just not confident getting in someplace later with a crowd that large. Thoughts??? Definitely don't want heavy metal, but other than that, we're pretty flexible with music tastes. |

Recco. for nice red to age a few years Want to buy a nice bottle of red for nephew ($50 range) that will do well with aging for a few years. He's 19 but does imbibe with the family at gatherings and does enjoy beefy reds - cab's usually. Hoping he'll put it in 'rents wine fridge till he turns 21 :) We usually drink Lancaster, Turnbull, Whitehall but wanted to deviate a little for him. Also, in case it makes a difference as far as availability, we live in MA. THX |
