I don't get the chicken and waffle craze.
Funny thing, salmon and maple syrup is divine! lol. My dad used to make salmon cakes with panfried potatoes. Then serve ketchup and syrup on the plate. Amazing. I do "get" the sweet and savory thing.

I do not understand the chicken and waffle craze, because I have yet to find anyplace that marries the flavors well. I've had it at a hole in the walls and an upscale establishments.
I JUST DON'T GET IT!
I have a very sophisticated palate so it's not like I don't get the sweet and savory thing. It's just that fried chicken and a buttermilk waffle really don't seem to go together.
I think perhaps a roasted chicken and a potato waffle might be ok with some sort of sweet spicy caramelized onion type marmalade. I plan on working on that this weekend.
Otherwise fried chicken, maple syrup and waffle really don't mix. sorry.
red Enchilada sauce
There used to be a recipe on the back of Whole Foods Market corn tortillas for a red enchilada sauce. That recipe is no longer printed. Does anyone happen to know it?
I'd like that exact recipe not some other recipe that's as good.

Unclepat is right. You can get either ground white or dark meat Whole foods and just make your own. At least you'll know what's in it.
In-N-Out Burger
My friends are all excited about this and Carl's opening. Burger places just don't excite me unless they're serving fresh ground grass-fed beef with organic veggies and homemade sauces and buns. Needless to say, I make my own burgers.
I found good BEEF RIBS in Dallas Metroplex
Thank you so much for this. A manager at Dr Bell's in downtown Dallas said there was no demand for beef ribs. I haven't returned since. I make them at home slow cooked for 4 hrs and I'm happy with that. The smokehouse at Whole Foods on Park Ln does pretty good ribs also, but not as good as my homemade. I will definately check out Pappas and Smoke.

I've been trying to decide whether or not to go. I have trouble paying for what I can make better in my own kitchen. I might check it out before lunchtime.Maybe I'll find something magical there.

Refrigerating canned food is it bad idea?
A chowhound really shouldn't be eating from a can, but I cuurently have a can of Amy's Chili and a can of black beans both OPENED still in can in my fridge. Nowadays cans are lined so there won't be a tinny taste. I was just too lazy to put them in containers, but I will in the morning. I wouldn't recommend leaving them for more than a few hours.

ugh. I started cooking at 14. Simply by asking my mom "how do you scramble an egg?" (because she didn't have time to do it). I followed instructions and voila. Everyone CAN cook. It's just that some people aren't motivated, or willing to be patient and try, or they just don't WANT to. If you can't cook there must be a mental flaw somewhere...and everyone CAN function in the morning. Some people have been coddled to believe that they can't.

I ABSOLUTELY agree with you. I'm 35 nd have been cooking since I was 16. I see so many 'conenient' foods advertised. It drives me crazy that the generation coming up thinks that this is the norm and that it's not damaging their health.

I HATE reality shows, but I figured I'd try this one because I thought it would be like Gordon Ramseys 'FWord' on BBC (which I just love). Well, it's nothing like that. Not entertaining, not informative, too many stupid catch phrases that really don't make sense. If it were on Food Network, I'd be protesting.

The show is just another stupid reality show. It's not informative and entertaining like "Gordon Ramsey F-word". It's more vapid and silly like a "Keeping up w/the Kardashians". I find the food to be absent of clean flavors and textures (why deep fry lobster) and excessive in fat. Just my personal opinion.

Risotto and paella don't lend themselves well Dallas restaurant preparation. Other cities know how.

omg I LOVE my nachos that way! of course, you end up getting 12 chips for $10.00, but I 've eaten them this way for song long that a pile of nachos is unappetizing to me. I live in Dallas. I have been brainwashed! lol! btw you gotta try the tuna sushi nachos at Victor Tango's.

fresh sardines (not canned) are the way to go. Ask your fishmonger. I get them at whole foods sometimes.
Restaurant substitutions-similar experiences?
Personally I think that people with food allergies eat out at their own risk. I can't begin to count the number of times someone was allergic to something and that was completely ignored by the server or kitchen. I never saw anyone get really sick, but it would serve them right if they did.
What is your favorite tomato/marinara sauce in a jar?
RAO, RAO, RAO...I could drink it over ice. I love it so much!

I don't even want to get started on Rachel Ray and Paula Dean...there's no such thing as mexican lasagna.. It's all concocted.
Flott tuna/ tuna in oil.
I think back in the 80's or early 90's it was drilled into our heads that oil is bad. (too much fat). Then all the companies started putting out tuna in spring water, so I started using it. (Actually my mom bought it because I was a kid). I just recently discovered Italian tuna packed in olive oil. Now I don't even use mayo anymore in tuna salad. Better late than never.

When I've got 5 fout tops and someone wants to break my flow by sending a sandwich back because they didn't want onions or tomatoes, then the tip doesn't matter anymore. The kitchen is just gonna pick the unwanted off and send it back out anyway.
Yeah, it's a service industry, but personal responsibility is always refreshing to see.
What's the best thing to put ketchup on?
OMG...diced potatoes,peppers and onion all pan fried together. Then mix ketchup w/maple syrup and dip as you're eat...heaven!
