Even though I've now "done" the French Laundry, my first tasting menu was seminal: Restaurant Lola in Dallas, TX

find more grass-fed meat, raw dairy, and generally GOOD foods without pulling teeth

sticky purple rice with coconut milk & mango - everyone loves it and it is friendly to just about every wacko diet on the planet
