It's an Atlas mixer.

And the filling I used was sausage, ricotta, and spinach. I ran it through the food processor, too.

Help with my new pasta and ravioli machine

I just received a pasta machine from my parents as a birthday gift. I got a ravioli attachment for it, too. It puts in the filling and crimps whole sheets of ravioli that you tear apart. It's awesome. But when I used it for the first time, it didn't work right. It kept jamming and the ravioli weren't even and coming apart and I ended up wasting a ridiculous amount of dough and filling. Any experienced pasta makers out there? Want to give me some tips? Hey, thanks in advance! :)

What's for Dinner #270 - The Hunkering Down Edition [through January 27, 2014]

I start my work week tomorrow-- 7 days on, an awkward version of second shift. I had some stuff in our fridge that I didn't want to go bad, so I made carrot and zucchini sticks and roasted them in the oven. I love roasted vegetables and this was the first time I had tried these. Lovely.
I had a few chicken breasts, one lemon, and most of two heads of garlic. I pulled out my trusty iron skillet that I love using in the winter-- using it already makes me feel warmer. I seasoned my chicken with S&P, Italian seasoning, and the lemon zest and seared it in my pan on both sides. I cut one end of my garlic off, stuck it cut end down and put quarters of my lemon in with the chicken and finished it off in the oven. Delicious. :)

Most frequently used kitchen tool?

I'm building up my kitchen and already have a lot of the traditional tools and cookware. But what is something that you use most in your kitchen for a wide variety of reasons, surprising or painfully obvious? Right now, mine is looking like my flat whisk- I use is constantly. What can you not go without in your kitchen?

Individual dips

The thing that would drive me crazy is putting the dip in the cups cleanly so they stay pretty. I would think that a pastry bag or homemade equivalent should work with most of the things people have recommended. How did (or will) you assemble them?
