What's the most VARIED cuisine in the world? if your using the geographical region method i would say north americian would be most diverse...think about it wr are almost all immigrant or ancestors of...easily the most diverse. |

Top Chef Canada (Spoilers for all Episodes) honestly I don't see the big deal about the horse meat. It is still common in many places in europe, and hell even at my local IGA (i live in quebec). I have never tried it but not because i don't want to, just never got around to it |

Top Chef Canada (Spoilers for all Episodes) I must say I was so looking forward to it when I saw it advertised but the result has been less than perfect. Mark has no personality what so ever, the other lady judge is kind of a bitch. Loblaws doesn't have enough varity to make the show interesting. It is only the first season but if it continues to a second they need better quality and variation. and a better head judge. As far as the chefs go there are some good ones there, Connie springs to mind, but some are just not that great. Marc Thuet might have made a good judge, honest outspoken, funny, big personality but I guess with that other thing he is doing "conviction" he doesen't have the time.....too bad |

Have you ever slaughtered an animal? Would you? I have killed a rabbit and processed the carcus. larger animals would be tougher. not because of moral reasons but logistical reasons. I have been present at slaughters of goats and lambs, but not participated. As a cook you HAVE to know where your food comes from. I fyou care about food you should know where your food comes from. I believe in the nose to tail movement, but I am not a militant believer. People should be aware of food and where it comes from. You may not have to kill it but at least please be aware that it was once a living breathing animal. Honour the animal by remembering it and where it came from/ |

I can write whatever I like and post it to the web but does that make it true or right? I can even change my name to etiquette maven or something equally assinine, but again that will not make it the rule. In my humble opinion dunk if you feel comfortable doing so, or not. In my favourite resto ( somewhat upscale, white tablecloth type of establishment) I love getting the mussels and a basket of good crusty bread and enjoy with a nice glass or two of wine. The chef owner loves that I do this ( we have discussed it) because most of the customers "don't appriciate the care I put into my food like you do" Just sayin' |

Top Chef Canada Ep 1 [also has discussion of episode 2] After watching ep 2 I just have one thing to say. SOMEONE PLEASE BUY MARK MCEWAN A PERSONALITY. Seriously that buckwheat potato blini had more personality than he does. Alot of the food on this episode was pretty lackluster also. And Bluto aka Sparkle bear is great. At least he is interesting to watch. |

Cheese fondue in or around MTL? I just had a family dinner yesterday of fondue. Very tastey but was wondering if there was a good cheese fondue out there somewhere. I had it a long time ago at a swiss place in T.O. but dont know anywhere in MTL. Maybe my fellow chowhounders can help me out again. Bye the way thanks for the rec of Le Grain de Sel, it was great. |

Jamie Oliver's Food Revolution, season two As am I. The British one was pretty damn good Season1 of the american one was pretty good also. I kind think its important to show people that there is great tasting easy to prepare foods out there that is actually good for you. I do all the cooking in our house and have the knowledge to prepare reasonably healthy meals. I went to culinary school and was a proffesional chef. Actually its kind of funny, I hated the naked chef when he first appeared, but over the last probably 10 years began to really respect him and his ideals. |

Intimate, non-show-off, but excellent restaurant in Montreal? I had a great meal at "Le Grain de Sel" on the weekend. service was great, food was great. Wasn't terribly inovative but good wholesome bistro fair. If you go there you have to get the Boudin Noir. It was amazing. Not terribly expensive either. Will definately go there again |

Top Chef Canada Ep 1 [also has discussion of episode 2] Agreed on both points I have to think about it for a while to come up with more names beyond Francois and Connie......actually Rob was pretty good (I think he is rob) I hope it finds it own groove and tries to be a little bit different then the stellar US edition. At least the all stars season was steller. |
