I saw that article and was tempted to try to make a batch but the lye freaked me out as well. I'd rather drive to Reading than croak from a pretzel recipe mishap.

Whole Foods in Wayland usually has them. Einsteins used to have a pretty good pretzel bagel but I think they discontinued them.

La Carreta Framingham

Been there a few times for lunch and dinner and the quality of food and service were very good. I wouldn't cal this authentic Mexican but it's far better than Margarita's and Viva in our area. As MABMQ mentions below the menu is extensive and somewhat creative. Drinks are poured generously. Well worth a visit. I too feel that this is the best Mexican you can get at the moment in the Route 9 area.

I think if I had to park across 126 I'd park at Sichuan Gourmet and carry some authentic General Gau and dried beef with chili pepper back to the Angry Ham !!

bone marrow

Cleo used to have an amazing Bone Marrow Cream Brulee.

AKA Bistro in Lincoln does a relatively simple shank with marrow presentation with sea salt and toasted country bread.

I'd say The Local in West Newton ,and especially Armsby Abbey in Worcester would be very good representation of the gastropub.

Framingham Center Restaurants?

The Angry Hams Garage has been getting some buzz but from what I hear it's mostly pub food and some Asian dishes stemming back from when the place was a sushi joint. Its at the intersection of Rout 9 west at the 126 offramp(2 Beacon Street) near KFC and BofA.

I'd be curious to get someone's take on the place having actually eaten there.

Has Mike's Pastry gone downhill?

I'm a sfogliatelle snob and I must admit the one's at North End Treats in Natick (supplied by Bova's) have been very good...as are the lobster tails.

Much of this depends on exactly when you buy the pastry. The 7pm sfogliatelle is a totally different pastry than one bought before noon.

La Carreta - Framingham Update ??

Had lunch there yesterday. Nice variety on the menu. I had a Mexican sandwich with chorizo queso and chicken on ciabatta. Pretty good. Frozen margarita not bad but needed 15 minutes to thaw enough to drink without a spoon and multiple brain freezes. I'd go with on the rocks next time. Pescatarian daughter had talapia tacos and loved them...vegetarian wife had veggie quesadilla and thought it was great.

They're working the opening day bugs out so I'd give it a week or so before deciding on service or quality. I'm optimistic but first impression was that it might be just a notch up from Margarita's.

I assure you I've been wide awake for the better part of the last 58 years (except for a few years in the early 70's) :-) ....

Scallion ON pasta...Yes... Scallion IN pasta ? Why ?

That said I've had some excellent scallion sauces on fresh pasta where you could actually taste the scallion. I've also had it in ravioli where I got the full impact of the flavor.

3Dogs - I actually bought the small pizza boxes for exactly that reason....was tired of taking flatbreads to peoples parties on my cutting boards.

I buy the large boxes of small chocolate trimmed cannoli shells and the frozen cannoli cream in the piping bags all the time. We use them at parties and have the kids pipe their own cannoli's before they devour them.

They just opened the new fresh seafood section a month ago... Clams in bulk a really good deal.

Unless I'm doing a giant cooking event, everything else I buy at Restaurant Depot is done as a split with a bunch of friends. For example those microwavable black chinese food take-out containers are a steal as long as you divide them up with friends or plan to have a 10 year supply for yourself. I'm still trying to figure out what to do with the other 100 take-out pizza boxes I bought as an impulse buy one day. Seemed like a great idea at the time. The place is an addictive morph between Home Depot and Toys R' Us for foodies.

You need to have an association with the restaurant business (or a friend who does) but Restaurant Depot in Needham is a haven for any kind of food container you're looking for....usually by the hundred.

Input for Boston/Framingham visit

Nothing totally unique or indigenous in Framingham that you couldn't get in SoCal. I'd spend my time exploring Boston...and as mentioned already ,skip the tourist traps (Union Oyster) and deep fried places (Clam Box) and go directly to Neptune...or for local (Sicilian) character the Daily Catch both in the North End. Taranta also has an interesting Italian/Peruvian fusion that includes some creative seafood specials.

Sichuan Gourmet on Route 9 in Framingham and Oishii in Sudbury are two excellent stops in MetroWest if you're already out there with an appetite.

Matt.... I'm with you on a version of the Miami La Carreta....Went there for years (and the Versailles)...even their airport locations are good. Closest thing around here is Oriental de Cuba in Jamaica Plain...and Dave's Fresh Pasta (and Sandwiches) in Davis Square has one of the best Cubano's I've ever had.

What worries me about the new Framingham LaCaretta is that financial woes can translate to service and quality issues if/when they open. Not a good thing to bootstrap a new restaurant launch regardless of their reputation 40 miles away in NH.

Slicing Ribeye roast for philly cheese steak

I'm originally from Philly and make cheese steaks often.

I use the exact deli slicer model that woodburner shows above and it works great. Rib eye should definitely be just slightly frozen for best results. I also slice some extra and save them using one of the inexpensive food vacuum storage machines. I put about 12 slices (for 4 sandwiches) in each bag and freeze them. When it's time to use them I soak the vacuum bagged meat in warm water for about 15 minutes to soften, and then flash fry.

I've also been playing around with sriracha sauce to try to replicate the hot sauce at Pat's Steaks !
