January 2013 Cookbook of the Month: Jerusalem: A Cookbook

Since finishing grad school this month, I am going to have more time to devote to cooking and am looking forward to getting "Jerusalem" from the library and hopefully joining in this project!

Hello, Chowhounders! I have been very interesting in home-canning for some time now, and was recently gifted a pressure canner. So far I have made a chili and gumbo z'herbes for my husband to take back to grad school to make sure he is well fed, both items being a success, and I am curious how many of you also can low-acid foods. I was worried it would not work (aka I would poison him), but as long as I can using the correct pressure for the low-acid foods, I understand from what research I have done that it should be safe. The best sources I have found is the "Blue Ball Book Guide to Preserving" (2009 edition I believe) and the larger "Ball Complete Book of Home Preserving." Does this sound like good judgement? I want to use my own soup and chili recipes, but want to be sure I am not going to poison my husband! I also follow all procedures to sanitize my equipment. Any other tips or recommended readings?

Perfect Roast Chicken

I *just* made this roast chicken/recipe tonight after searching for recommendations on chowhound. Turned out beautiful and was remarkably easy to make. Just used a large saute pan, salt, and pepper as the resume suggests.

Do you ever like the crappy better than the excellent?

I think of a lot of this has something to do with what we were brought up with. I'm not sure if I've ever had real maple syrup, but I'm fine with the regular Mrs. Buttersworth syrup or even the store brand.

Something I've been craving lately is melted melted on saltines. On Saturday mornings when we were little, my Dad would set saltines on a plate, sprinkle shredded cheddar cheese (store brand in bag) on top, put it in the microwave and let it do it's magic.

Real Deal Hot Chocolate

I just tried this and thought it was delicious! It made the perfect amount for me and my husband. Any more and it would have been too much. Of course, I drank it over an amount of time while pouring over cookbooks, so it was just right. I must admit all I had was a bag of store-brand semi-sweet chocolate chips, but it still turned out wonderful. I did add a tiny bit of vanilla and cinnamon, too. Thanks for posting this, Aida!

Do some families really do this?

When I was younger, my mom made a weekly menu, but it was not a set schedule where we had the same thing week after week. The main purpose of her menu was to stay in budget for grocery trips and get everything needed in one stop, as opposed to forgetting things and having to go back, or thinking of things the day of and having to make a grocery stop at 6:00. I, too, try to keep an idea of what we have to eat during the week. I don't like to make multiple stops to the grocery.

Stand Mixer - Which One?

Within the last month or two, I had a very good experience with KA. I received a refurbished Stand Mixer about 2.5 years ago, and while using the ice cream maker attachment and a regular whisk attachment (two separate occasions), my mixer went a little crazy. On the "stir" setting, it was going as if it were on the highest setting (cookie dough and ice cream EVERYWHERE). Luckily, Kitchenaid was incredibly understanding. Normally they only replace stuff within 1 year if the item is refurbished, but they replaced my mixer no questions asked. This one works even better than the last.

Strawberry Ice Cream

So I did end up making this (3+ weeks ago...), and the same thing pretty much happened. This time, I cut the strawberries even smaller than the first time, put them in a lot of powdered sugar and let them sit like that (I think overnight even in the fridge), but they still ended up rock hard. They weren't as bad as the first time and were easier to scoop out after sitting in the fridge, but it still happened. I guess if I try again I'll make them even smaller if possible! Maybe it's because I didn't just coat them with the sugar?

Hello!
I made homemade strawberry ice cream about a month ago or so, and the strawberries ended up rock hard. Today I want to attempt making it again, but is there anything I can do to prevent the strawberries from turning out so hard? Should I cook them first?
Any suggestions would be great! Thank you.

Father's Day-Arkansas

Hello, All!

I am starting a project for my Dad for Father's Day. Instead of buying him a tie to add to his collections of hundreds, or something he'll never use, I thought I'd make something instead. He works for Tyson, and visits a lot of the plants all over for his job, and I wanted to start a notebook for him that lists various places to eat in the cities he stays in. I looked on the website, and already knew there were a lot, but there really are A LOT of plants. I am going to just start with Arkansas, where he and my mom moved, and I'm hoping some of you can give me some good ideas on where to dine in these cities! June 2009 COTM: ELIZABETH DAVID CLASSICS

I just found out my library ordered it and has it on reserve for me! I haven't participated in one of these before, and hopefully will have more time in June to do so! Plus, I'm getting married in 10 days and will be living with someone who will hopefully help with dishes a little more ;-)
I hadn't heard of Elizabeth David til someone mentioned it for June, so I'm excited to learn who she is and what she's about!

Yes, it's an older book (1993), and it's floridian cuisine influenced by Latin America, Cuba, and the Caribbean (from what I understand). My mom gave it to me about a month ago because it's one that she has and uses because it's where she was raised. Potluck Wedding Reception?

At least they had provided food for you to eat. It may not have been the best after a 13 hour drive, but not everyone can afford an extravagant meal. That said, I can understand how this might turn you off from a reception.
For example, I am getting married in May and chose to have my wedding and reception at a time where it wouldn't be dinner or lunch because I can't afford to provide everyone with a great meal. However, we will provide desserts and probably fruits and veggies to munch on.

Potluck Wedding Reception?

I can see where this would be frustrating, especially for the family members who are traveling great distances to be there. Though, perhaps the bride and groom don't fully expect out of town friends and family to all come with food in hand. With church potlucks, if someone forgets and comes empty handed, they are still always welcome to stay and eat! I bet they'd be happy just to have you there. Pick up some soda, and stay and enjoy the rest of the delicious food hopefully other people will bring. They may have just thought it'd be a fun idea!

when did you start to become interested in food?

I became interested in baking around age 15 or 16. I started watching my mom more closely in the kitchen, and sure, I started watching Food Network regularly and became engrossed in what people were doing. Then when I started dating my now fiance, we began to cook a lot together, by starting out with some salsa, and moreso when we moved out of our parents. It was probably his family though that got me real interested in various foods and spices, and going out to eat, which my family wouldn't really do often (I have 6 people in my family). My future SIL is an amazing baker, so she's inspired me a lot and had me interested. My mamaw inspires me to grow my own garden and use up everything I have in the kitchen while still making amazingly delicious soul food. I get more interested every day though by what I read on here, in magazines, online, on tv, etc. I learn more and more each day.
