Any Baklava Makers Out there?

Not all nuts at Costco are sold in the same area, especially the Pistachios. Look for them near the cash registers over by the trail mix/bulk candy area.

Which sauce pan to use for cooking rice? Shallow/wide or taller/more narrow?

The way my Dad taught me was placing your hand on top of the washed rice and fill til the water covers your hand.
Always worked for me, plus he ran the kitchen in a chinese restaurant.

Cooking rice isn't rocket science. Sorry to make that statement. I can cook it in basically any pot ( which I've had to to when visiting people) It' the understanding of water ration to rice - as someone referred to earlier. Majority of people are in a hurry and that leads to burnt, undercooked etc. It's the ratio and level of heat that the main concern for me when cooking rice.
I like to have a crust with my rice as I was brought up on " Stone Soup" or you throw butter on it and have a crispy snack. BTW - that's also what/how Sizzling rice soup is is made - from the crust.
Quinoa is the same for me except for the crust thing.

Why You Should Definitely Cook Bacon in the Oven

I use to microwave bacon when I just wanted a few pieces and it requires a lot more paper to absorb the grease if I did an entire package. So I just use it now to heat up the oven cooked bacon.

I've used both gelatin & Oetker methods. Haven't tried marshmallows, it would seem "too sweet" for my taste. I like using Oetker and have not had any issues with its use.

Are Ghost Peppers Actually Used in Indian Cooking?

I work with a physician who is from Mumbai and his mother used ghost peppers often. I was able to grow 2 colors this year Red & Yellow ( goal is to get the Chocolate color next year). I was told that the secret to these bad boys is to give them a quick fry and it takes away some of the hot lead sensation.

Dried salted fish was my mom's thing as wells the fermented egg & peanuts. Don't forget to add fish sauce & scallions as condiments.

Ginger Chicken Jook (Rice Porridge)

One of things I miss about not living near the parents. I guess I need to seek out some salted fish & fermented eggs tomorrow. Perfect food for winter cold weather.
