Kale-What Do YOU Do?

Veggies Get the Spa Treatment

Yeah, I would definately advise against using your cookie silpats to bake meatballs. I never could get them clean enough to use for cookies again.
But I hate those collapsable steamers. Mine always fall apart.

Bake-when-ready Chocolate Chip cookie dough?

I've frozen dough balls too and they always are great but lately I've gotten in the habit of baking the whole batch and freezing the baked cookies. You can nuke them for 5-10 seconds to rewarm them or let them defrost on the counter or eat them frozen. We're getting addicted to frozen cookies now.

Gluten Free (and dairy free) Products - Favorites?

I forgot about that Galaxy soy "parmesan". Alex, my son goes through phases where he LOVES it and then can't stand it. And last year we had a batch and he said it tasted bad and then a few weeks later that batch was recalled for having dairy contamination!!!

Chocolate Spatula Thermometer

My attempts at chocolate tempering for Chirstmas gave me nightmares. I was browsing and saw this today:

It's a spatula/thermometer combo with guides for chocolate tempering.

Has anyone seen/used one? I would love to do some caramel filled eggs for Easter but the tempering still fills me with dread. Especially the trying to mix, hold the bowl and hold the thermometer at the same time. But I don't want to buy it if it's a piece of junk.

Gluten Free (and dairy free) Products - Favorites?

My son has a dairy allergy but we aren't always gluten-free but here are our dairy-free favorites (most are gluten-free):
Butter sub: Earth Balance tub
Milk sub: Silk Enhanced Omega-3
Cheese sub: Follow Your Heart Vegan Gourmet Mozzarella for pizza, Road's End Organics Kids and Cheddar Chreeze for macaroni (they have gluten-free versions)
Chocolate: Scharfen Berger Baking Bars (semi-sweet and unsweetened), Tropical Source Toasted Almond Bars (gluten-free), Enjoy-Life chips (for when I don't feel like chopping chocolate), Chocolate Emporium (http://www.choclat.com/) for white chocolate chips, shaped chocolates for holidays (ie Easter bunnies) and chocolate lentils (M&M subs
)Cream Cheese sub: Tofutti, I love the French Onion in mashed potatoes!
Yogurt: Whole Soy & Co (blueberry is my son's favorite)
Ice Cream: Tofutti, Tempations, Purely Decadent
Frozen treats: Tofutti brand "Marry Me" bars are like dairy-free Dove bars, Tofutti Fudge Pops, Philadephia Swirl Cups
Best Chicken Tenders: Bell and Evan's brand is the best! (gluten-free versions are good too)

My son and I love soba noodles and I've found some brands at Asian markets are buckwheat/yam with no wheat.
Definately not gluten-free but we love Divvies Chocolate Caramel Popcorn http://www.divvies.com/
