Crispy Fried Chicken Wings

I just wanted to add to this post. 350-370 is curcial for deep frying. Even more crucial is the speed at which the oil heats back up to this temperature once the wings (or whatever) is dropped into the oil. Many chinese restaurants are cooking on woks that are heated by 180,000 btu sources. Most kitchen ovens do not even come close. I know mine doesn't.

I have recently been experimenting with cooking the wings in oil heated in a wok on the stand of my turkey fryer. The fryer is 55,000 btu and is much more powerful than my kitchen oven. I have been getting excellent results deep frying, dry frying, and stir frying. I have been experimenting with this outside (also with fried rice and cumin lamb), but it seems safe enough (unlike frying a turkey) to do inside.

Bread Making Class

Hi,

I am interested in finding a bread making class somewhere in the penninsula (redwood city-mountain view preferred). I notice that Draeger's has cooking classes, but I did not see any upcoming regarding bread making.

Indeed, Mi Rancho was one of the 6 or so. I also tried the place on newbridge, and the one on Menalto. Went to Chavez in RWC, the one next to Safeway on California in Mountain View.

I tried one or two others, but no luck...

Queso Asadero

Hi,

I have an excellent queso blanca recipe, but it requires queso asadero. I have been to at least 6 different mexican markets between Mountain View and Redwood City, but could not find it. Anybody have any suggestions?

Marjoram

Hi, I am looking for bulk marjoram in the peninsula. Any ideas? I was thinking elephant pharm or whole foods in palo alto, but I am not sure. I went to the WF in Mountain View, but I did not see bulk spcies.

Yeah, I thought about Whole Paycheck, but Monterey market sounds good. Ill check that out. I also heard of the MSSF, I was looking forward to trying to get out to pick my own this year. I can't before thanksgiving though, so I will try to buy some.

Wild Mushrooms

Hi,

Does anyone know where I can find a good selection of wild mushrooms in the bay area. I am in the peninsula (Menlo Park), so a store around there would be ideal. In SF or berkeley would be great as well.
