CHOW Ginger Beer

I used champagne yeast. Like beer , I boiled the water and quickly cooled it. Fine bubbles , good ginger flavor. Think lemon juice heightens the flavor of the ginger. Not sweet at all though. I fermented for 2 days then bottle conditioned for 3 days and think the yeast ate all the sugar.
