Commonly mispronounced foods

I've often felt the same way about french words, why aren't they spelled the way they're pronounced?

I'm not really familiar with chinese except to know that they have several different romanization systems with huge differences among them: http://en.wikipedia.org/wiki/Comparis....
Also it's a tonal language which makes it even more difficult.

What I'm saying is that there are rules to romanization, people don't just make things up willy nilly. The Hepburn system is the most common romanization system for Japanese though you may see others such as the Kunrei shiki.

In any case, the usual readings for 酒 are sake (when used alone) shu in 日本酒、saka in 酒場 and zake in 地酒。

so yes there is a correct spelling

I find it funny how people in this country tend to fetizise sushi. As in you must eat it immediately, you must sit at the counter, and you must banter with the sushi chef. And you must never eat takeout sushi, supermarket sushi or gas station sushi.

Meanwhile in Japan, people are buying sushi from supermarkets and convenience stores, having sushi delivered, and grabbing sushi off conveyor belts. The horror, the horror.

Best mini torch for brulee, etc.

I have and recommend the Iwatani, which is attached to a standard size butane canister available at most asian markets. I see it in use at many sushi bars.

I'm quite aware of what sunomono is. Although I've never encountered a spicy version of it anywhere it Japan I'm not categorically saying it doesn't exist. But seeing a customer add hot sauce, be it tabasco, sriracha or whatever to a dish of sunomono would certaining be cringe-inducing for me. And while I would rather not delve into stereotypes, I believe that innovation is not a prized attribute for Japanese chefs of the non-iron variety, but that executing a traditional dish properly is. And that means not making buta shogayaki with duck.

BTW, I never said that you insulted him by making a special request. However, after hearing about what you did to the sunomono I wouldn't blame him for being disinclined to honor it.

Sorry but I think much of your criticism is unwarranted. Sunomono is not supposed to be spicy, and what they served you sounds like the classic preparation of this dish. Adding sriracha to it might have been perceived as an insult or the mark of an amateur. And unlike chinese or other asian cuisines, proteins in a particular dish are not considered interchangeable. Pork is prepared in certains ways, duck in certain ways, etc. I can understand their refusal your request. And I can't understand why you expected to find crispy duck in a Japanese restaurant.

For those of us who use Chowhound for real research in a new city, THIS NEEDS TO BE IMPLEMENTED

This sounds like something that would work better as an app which interfaces with the Chowhound database and saves all your annotations and such locally. A few years ago I created a similar application using Microsoft Access which would periodically open a transparent IE window and navigate to a certain online forum to perform a search for specified terms. It would then screenscrape and parse the results and insert the data into the Access database. After the data collection phase it would execute an analytics module to run calculations and create a report.

It seems I had a lot of time on my hands back then.
