Beef Wellington

I have made Beef wellingtons 2 xmases in a a row and they were a hit, but I can never manage to time the meat being done with the pastry, I want to take the meat out at a med-rare or med, but the pastry is hopelessly undone at the time. Usually the meat spills over to past medium by the time the pastry is done.

Any tips?
