Confetti Rice and Bean Salad
YIELD: SERVES 6

Note: I used a wild rice/brown rice blend for my salad, but Basmati rice is delicious, also. Whatever rice you decide to use, cook it according to package directions and use it in the recipe – you should be good to go!

INGREDIENTS

Salad:
3 cups cooked rice, cooled to room temperature (see note)
1 (15-ounce) can kidney beans, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1 1/2 cups frozen corn, thawed (or same amount fresh corn kernels)
4 green onions, white and green parts thinly sliced
1 red pepper, seeded, cored and diced
1/4 cup minced fresh cilantro
Dressing:
1/3 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 tablespoon sugar
1 garlic clove, minced
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 teaspoon black pepper
DIRECTIONS

In a large bowl, combine all of the salad ingredients and toss.
In a small bowl, whisk together the dressing ingredients and pour over the salad. Toss to coat. Chill the salad for at least 2 hours before serving to let the flavors blend.

Cooking advice for make ahead meals

Cooked chicken with gravy or turkey with gravy freeze well, just give him a biscuit with it. Stuffing is another thing that freezes well. Doesn't have to Thanksgiving for that!

Cooking advice for make ahead meals

Went thru the same thing with my parents. Meatloaf and lasagna freeze wll. Made them in foul pans, thaw, bake and serve in one pan. Chicken noodle casserole and chili work well too. So does a tuna noodle casserole too. I even emailed Cambells soup company and asked for help with recipes. They sent me coupons and recipes. I don't use the creamed soups for myself, but they do work well in casseroles and do freeze well. Good old Tater Tot Casserole would be good too.

Advice needed for heating up Spaghetti Carbonara.

I took everyone's suggestions, but mostly yours. I put it in a glass bowl with a tight lid and set the bowl in some hot tap water. Then I got about 1/2 cup of very starchy water and put that in a non stick pan and low and slow, heated it up. Added a little more cheese, salt and pepper. Eating it now. Not as silky as the other night, but worthy of another meal. Thank you everyone for all your help. Love all you Chowhounders!

Advice needed for heating up Spaghetti Carbonara.

I made a very big bowl of carbonara tonight and have some leftovers. How do I reheat this? Any ideas as to what I do with this? I don't want to throw it away, the pecorino cheese was pricey! Help me please? Thanks ChowHounds.

My Aplogies, but I Need to Vent About America's Test Kitchen

Good topic. I used to subscribe too, but let it drop. Got so sick of them pimping me for more $. Now I still like the cookbooks and recipes and I do purchase a magazine from the book store once in a while. But I delete those emails. No more. And I hope someone from ATK/CI is reading this post.

Vintage cast iron shopping?

I used to look for the Griswold or Wagner name on the bottom. But after talking to a dealer/collector at a flea market, he said most old pans are made by Wagner or Griswold, but they didn't put names on all of them, to sell them cheaper. He told me to look for the smooth inside. Sign of a well used pan. And to follow this method of seasoning.

Saggy celery

Got a problem and could use some advice. After 3 days in the crisper, my head of celery will go limp. How do I keep it crisp and fresh. Right now it looks like it needs that little blue pill, if you know what I mean.... Help.

Stainless steel and 'green' non stick cookware?

I bought Caphalon tri ply years ago and love it. Got it at Bed, Bath &Beyond and they let me use the 20% off coupon. You might want to look at the Emeril line of cookware, it is made by All-Clad. As for non stick, I use cast iron. Love that too.

Need some cast iron reseasoning advice.

How do I get this sticky mess off the pan?

Need some cast iron reseasoning advice.

I have been cooking with cast iron for about a year and love it. But after making stroganoff last night in my big CI skillet, I noticed the burger was sticking pretty bad so after I cleaned it up I decided to bake some more oil into the pan. I swiped some canola oil in, laid it face down in the oven and baked it at 350 for about 2 hours. What came out was a sticky mess! What do I do now. I do not have a self cleaning oven any longer, I got one low temp steam model. I do have a Weber gas grill outside, however I live in MN, very cold out and I don't know if I can maintain the heat to clean this pan. Help me please! Thanks.

Places to eat in Door County WI?

The famous Al Johnson's restaraunt in Sister Bay. It's a Swedish restaraunt, kind of heavy if you know what I mean, but good. The Log Den, on hwy 42 south of Egg Harbor. Good supper club. shipwrecked Brew Pub right in Egg Harbor, good sandwiches. Coyote Roadhouse, next to Kangaroo Lake, great portabella sandwich! Julie's Cafe, wonderful breakfasts. Next to Pennisula state park in Fish Creek. Have fun!

Need some help with popping popcorn.

I purchased a new gas stove with the 17000BTU front burners. My old gas stove had the regular burners. My old aluminum popcorn popper, circa 1960(?) has always worked well on the old stove. My DH is the official popper and insisted on using the front power burner. The popcorn is coming out tough and some are partially popped. I have told him to use the gentle back burner, but he won't. Is there a scientific way to pop corn? I use white kernels only, like the taste. But want my tender popcorn back. We need an education in how to pop popcorn... Help!

CHOW Reviews: Calphalon Contemporary Nonstick 12-Inch Everyday Pan

I have this same pan, but in try ply stainless steel. Bought it on sale and use it very often. I love roasting whole chickens. And it is great for braising roasts. I would highly recommend it.

What would *you* want from the food pantry?

I volunteer at the food pantry. Any hygiene item is valued along with dish or laundry soap. Paper towels are a good thing too. Shampoo was always a good thing but always in short supply. And don't forget diapers. New moms really need those along with any baby shampoo.

Need a little advice...

Making a nice big pot of chicken vegetable rice soup, tastes great but it's so watery. Do I thicken? And if so, how? Can't use gluten or dairy. I would like a soup with a backbone. Thanks ChowHounds!

And now a nice story about something written on a receipt for a change...

You sound like a true gentleman, bitch! ;-) Thank you. I know the military appreciate your gesture. My husband feels so honored when someone welcomes him home. He is a Vietnam Nam vet, the forgotten ones who did not get a homecoming.
