I made my first batch of mozza using rennet and citric acid. Although I read that acid based whey would not make ricotta, I had to try. I didn't get ricotta either.

I would not do a)...it will not be crisp.
If you have time, I think your best chance is for c) prepare and refrigerate then bake Friday morning.

Thanks all for the tips. The cookie dough was a half batch, with 1 cup of butter. The test batch was definately overdone and spherical cookies !!! and maybe left overlong in the oven because I got distracted. The first batch were well round balls of dough that were at room temperature.

I beat about 1/4 cup of butter with 1/4 sugar and 1 egg and slowly mixed in the cookie dough. I I dropped the cookies instead of making balls of dough. The rescued cookies have baked up nicely with rounded soft cookies.

Freezing tortillas

I buy Costco size packs of white flour tortillas and freeze the bundles of 12. Defrosted and stored at room temperature (not stored in the fridge) they are still great. If they do get stale, toast them on a dry fry pan or in a oven for a few minutes. Broken up they may great crackers and I use them with hummus.

save the cookie dough

I made a batch of dough for the Neiman Marcus oatmeal chocolate chip cookies. I baked some and realized that they are crunchy cookies not chewy cookies. I like chewy cookies.

How can I convert the cookie dough to chewy oatmeal cookies?

sweet potato fries

I make roasted sweet potato in the oven too. I cut the sweet potato into 1" cubes. Try think lightly oiled, at a higher temperature ~375F for about 35-40 minutes in an uncrowded oven. If there are too many things in the oven they just steam instead of crisping.

Perhaps seasoning some flour or cornstarch would get that light coating on commercial fries like suggested below.

Raw Garlic with Pasta

I have a variation that I call Pasta la Vista. raw minced garlic. raw minced onion and blue cheese and fresh hot pasta. it's so good!

before you buy a Costco size package, buy a small package. These sausages have a strong flavour and you don't need much.

I made po'k roast (say it with a Chinese accent) : ) this weekend. I trimmed some fat off a boneless pork loin and browned it in an dutch oven. With the pork loin, goes peeled some carrots and cut up some onions, about 1/4 cup brown sugar and 3 star anise and a couple pieces of dried licorice root with about 1 cup of liquid - stock or water and a spoon of hoisin sauce or Lee Kum ground black bean sauce. Braise until tender. It tasted like home.

No-Knead Bread vs Traditional (Kneaded) -- How are they Different?

I've been making kneaded bread. It really easy and is less salty than no-knead bread. The kneading only takes a few minutes. With a single rise in the baking pan you can have fresh baked bread in less than 2 hours. Besides, in the cold winter months, I like using the oven.
I just make pecan craisin bread and it was delicious!

What do you do with canned salmon? Not salmon patties.

I make a soup - broth, carrots, celery etc. with a can of salmon and a splash of apple cider vinegar. It's my spin on a Finnish soup style called selyanka. Yum.

canned tuna--what do you like to do with it (healthy)?

I make tuna mac-n-cheese. With the seasoned tuna (I like the thai flavour) I'll use it to flavour a drained can of white kidney beans or a quinoa salad.

No-Knead Bread vs Traditional (Kneaded) -- How are they Different?

The no-knead bread that I've made recently are lumpy. The moisture isn't evenly distributed so I'm disappointed with the baked bread.

I picked up an unenamelled cast iron fondue pot from the thrift store. Because I'm not sure of what type of fuel to use I have enjoyed a fondue yet.

disappointing kitchen toys

I'm also dissappointed with my Calphalon Kitchen Essentials 'chicken fryer' glass lid. The lid leaks from the seam and spatters a lot! My other glass lids don't do that. I guess that's what you get for buying at an outlet store. I'm looking to replace this thing.

Should I buy kitchen aid pasta attachment?

I've never used a manual pasta roller. I've only used my KA atttachment. I really like making my own pasta - for lasagne, ravioli, tortellini, herbed pasta. I'm annoyed with my KA food processor and but there isn't a lot to the KA pasta attachment so I wouldn't expect it to break.

If you can wait, you can get the pasta attachment on sale instead of paying full price. It will make it 'easier' to use!

Looking for potato substitute for fried moong dal pakoras recipe... today.

i was going to say cauliflower too. if not that how about something with beta carotene like yams or pumpkin?

disappointing kitchen toys

I'm disappointed with my KitchenAid food processor and the local service guy. The brand new and never used before blade separated from the disc. The slicing disc is broken and the main bowl is damaged. There were bits of plastic in the food. This is not covered under warantee. Therefore replacement is at my cost. Be very careful when using your kitchen toys - keep the reciept in a safe place and test all components.

Have you been disappointed by your kitchen toys?

Pearl Barley - favorite recipes?

I call my favourite pearl barley Chinese Chestnut Chicken. I measure out and wash some pearl barley into my rice cooker. I measure the water for barley and add the ingredients: a coarsley chopped stick of chinese sausage 'lap cheong'; some dried shitake mushrooms (with stems removed); some prepared chestnuts finally I add some chicken thigh pieces. I stock up on foil packs of prepared when I'm in Chinese grocery stores. When the 'casserole' is cooked, I drizzle some oyster sauce and fold in and enjoy. It makes me think of my mom, so it's real comfort food.

retro fit rack for slow cooker

I got a new slow cooker cookbook that includes directions to use a rack inside the slow cooker. My slow cooker didn't come with one. I want to try these recipes and am looking for suggestions or criteria to use a rack inside my slow cooker. Any thoughts?

breakfast and snack ideas for high-blood sugar

WOW! Thanks all of you for your advice and great ideas. I've definately noticed how certain snack made me feel and I've decided change my eating habits. I hoping that only eat a half portions, being active after eating and eating treats less frequently along with losing some weight will help.
