What to you miss from your neighborhood "old school" Bakery?

Parker House rolls, coffee cake, and pumpernickel from Carl's Bakery on Jackson St. in Memphis, an area where lots of Memphis's Jewish population lived until the suburbs developed in the 50s and 60s. Carl's Bakery hung in there until as recently as 10 or 15 yrs ago, long after its last kosher customers had moved to the burbs.

NYT Review of Michael Pollan's "Cooked" Misses the Point

In her review of "Cooked," Bee Wilson writes that Pollan's lack of pragmatism "widens the gap between cooks and noncooks," thus defeating the premise of the book that cooking our own meals is essential to our health and the planet's health. Ms. Wilson's example: a time-consuming slow braise not practical for the typical rushed cook.

Ms. Wilson misses the point. "Cooked" is about transformation--the alchemy of cooking, the cook 's wonder at the process of cooking. Once our awareness is raised, there are many cooking primers available to teach us how to speed things up to fit our busy schedules. And maybe we can even slow down our busy lives just a little--stop and smell the rosemary.

The distinctive aspect of the problem thread is its huge size. This is what makes me suspect the problem is the default Kindle browser, which does weird things frequently.

An aside:I very much liked my original Kindle Fire, but the KF HD is quite buggy.

Thanks, carolinadawg. For whatever reason, the "grayed" replies and sub-replies have become inaccessible to me. They will not open again. My newbie status notwithstanding, I have been reading this board without difficulty for months. I even contributed one post that drew reasonable interest a month or so ago.

There is some sort of formatting problem with this particular thread that has become closed off on my Kindle Fire. The origin of the problem is unclear, and I have experienced nothing similar on CH before or since.

I suppose I'll just let the mystery be.

Yes, I am definitely a newbie, but I have not read nearly all the replies, nor the sub-replies. Clicking on the "+" does not resolve the problem. I suspect the problem may derive from my Kindle Fire's very buggy browser, but I was hoping against hope that this was indeed a common newbie mistake that could easily be resolved.

In any event, many thanks for your suggestion, suggestion, gaffk.

Echoing what BigJim already said--ebay, Craig's List, and thrift stores are my favorite venues for straight cast-iron. I have found some lovely old Griswolds. I wasn't as sure about used Le Creuset, as the enamel is so crucial to its purpose.

[E]llabee and I are walking on the wild side. Happily, the interiors of the ones I purchased, both lid and vessel, are white (whitish, actually, due to use). Not to discount the toxicity of cadmium, though. It's nasty stuff.

Fascinating, Blondelle! I knew nothing about this until you told me, and I have been doing some reading up on it. These pieces are in very good condition, so I am going to proceed with the purchases. But I'm not as gung-ho about older LC pieces, now. I appreciate the info.

Used/Vintage Le Creuset--Downside?

I am poised to purchase two used Le Creuset dutch ovens (enamel over cast iron). They appear in good condition. One has a slightly chipped handle. Both have slightly discolored inner surfaces from years of use. The enamel is in good shape on both.

What are the downsides, if any, to buying these pieces used?
