@bellywizard - you could use regular salt. I just happen to like kosher salt for just about everything!

Thanks msmarm. Just to clarify, there's no crust - the rim on the fritatta is just browned egg that pulled away from the pan a bit. But anything that mimics crust on Passover is a good thing, eh? :)

Passover Etiquette Dilemmas

I'm a bit surprised by all the fuss here. Maybe there are some generational differences at play, but as a seder hostess, I would never be offended by someone who had to leave early (especially if the seder ran past midnight!) or who didn't want to eat gefilte fish. It wouldn't even cross my mind.

How to Make a Healthy Snack

@goodhealthgourmet - thanks for your comment. You got me thinking, so I checked back in with one of the nutrition experts I spoke to. She said that snacks don't need a ton of protein to be beneficial. It's a snack, not a meal remember, so the requirements are different. The *combination* of a little carb and a little protein is more important with regards to satiety than eating a substantial amount of protein in every snack.
