Carbon vs. Stainless Steel Fry Pans

I can't really answer your question as such but I can say that I was researching the same choice as you are now. With a little reassurance, I went with CS and picked up my first de Buyer Carbone Plus and am thrilled with it. I really love it. The seasoning is going well and I've not had anything sticking to it so far. I've not used any acidic contents yet though so I can't comment. I hope you are as happy as I am when you get yours... if you do.

How clean should a seasoned carbon steel pan be after cleaning?

Helloah!

So I've got my new de Buyer carbon steel pan and used it a couple of times. I'm thrilled with it and glad of the earlier advice that you guys kindly gave.

My new questions this -

How clean should the pan be after washing it. It's discoloured, of course, but there's a noticeable thin coating of dried oil in places. I can feel it when I wipe my hand inside the pan. I can also feel little splattered areas around the rim. I'm not sure if I should be scrubbing these off or if this is the start of the seasoning going on.

Any advice would be greatly appreciated.

De Buyer pan handles - flat iron or rounded steel?

I'm after some advice...

I'm going to buy a couple of De Buyer carbone plus skillets but noticed that they either come with flat iron handles or rounded stainless steel ones. The later are cool touch ones but I'm interested to know how hot the flat ones are likely to get as I would prefer them unless I always have to use a towel to pick the pan up.
So, any advice and/or opinion would be appreciated. Thanks.
