How would I know if if was a hen? It was one if the larger brown chickens. They also had smaller white ones.

Why is my fresh chicken so tough!?

I bought a fresh chicken from the halal live poultry place up the street. Never went there before. Watched them kill the bird in front of me. It was gross!

But not as gross as the roasted bird. I took it home and threw it in the oven with the same chicken recipe I always use (cooks Illustrated Weeknight Chicken).

The bird came up to 160 so I took it out and it was so tough I couldn't even chew it! What did I do wrong? Should I have chilled the bird first (I didn't). Or is it maybe an older bird.

It's in a pot now becoming chicken soup...

For my group of friends it is pretty worth it since the 75$ price includes unlimited wine and beer; which they are certainly not stingy about. We are all pretty thirsty people. :)

OMG get the back room at Supper in the east village. Its a prix fixe all you can drink multi course meal. You get your own waitstaff, ipod stereo dock, and bathroom.

Its the best. They are so nice.

We have done this party there maybe 6 times over the years.

Cash only though.

I liked the Mother In Law brand too. I bought it somewhere in brooklyn. Thought I thought it was a bit overpriced. I saw Trader Joes just started carrying it as well. Wonder how it is...

Pizza other than Margherita from your favorite shop

Guanciale and Egg pizza at Robertas!! Its amazing. They don't have it on the regular menu but will make it if you request it. It basically has a whole egg in the center and very thinly sliced pieces of guanciale.

I love all the varieties by the Tobagi brand. Especially the scallion one! It's much better than any of the ones I have made at home.

David Chang refrigerator kimchi

I made another chang recipe that called for kimchi.

I find that his recipes for kimchi are not traditional, but they come out decently. But are not really like what I was taught to make when it comes to making the stuff. And I have found that, unsurprisingly, sore bought does not make a good substitute.

Why did my yogurt turn out weird?

I think there might be something to this uht milk issue. I have never used organic milk before this batch. I made a second batch last night using the same milk and noticed it was ultra pasteurized. I used a few tbs of fage as the starter this time and let it set for about 20 hours in my incubator. It still had a very very mild flavor, but is a bit more tart. Thanks for all of the input.

Rinse preserved lemons?

I do, but only to control salt content. I don't find that it takes away from the lemon flavor.

Why did my yogurt turn out weird?

I made yogurt yesterday. Just like I do on a regular basis, but it turned out weird. And I just cannot figure out why.

Brought 36 ounces of organic 1% milk to almost boiling. Let it cool down (maybe not enough) and whisked in a 6oz container of stoneyfield non-fat plain yogurt.

I put it in a large pyrex bowl and put it in the incubator. Bowl fits perfectly and there is no outside air getting in.

I left the yogurt to set for about 13hours. It set and had a pretty thick texture (maybe a little grainy) but it is not tart like yogurt AT ALL. It is very smooth and creamy tasting.

I like tart yogurt! It tastes like yogurt. This does not taste like yogurt, but does have the texture.

What happened? Is it safe to eat?
