What is your favorite cookbook of all time?

The thing about the time with braising is that it's hands-off for most of it. I cook with this cookbook on weekdays all the time. The total time you're cooking is pretty low, and then you stick it in the oven.

Cooking bacon in the oven... why the hype?

Lower the heat, for one, but I prefer the Cooks Illustrated method whereby you add water to the skillet to cover and slowly render and cook the bacon in liquid, then as it evaporates fully it crisps and fries in its own fat. I've gotten flawless results that way.

As sparrowgrass said, they're spectacular simmered with beans, split peas, or lentils. Throw in a bunch of chopped kale and you've got a winter meal for the ages.
