Burgers fell apart

Hello, I was wondering if someone could answer my question. I made teriyaki burgers tonight and they fell apart on the grill. What happened?? I used GROUND CHUCK. I added a bit of scallions and a bit of jalapeno, along with my other flavorings and seasonings. THis has never happened to me before. What went wrong?

Does anyone have a recommendation for a sub for clam juice? I am making a pasta dish with shrimp that the recipe calls for this and I don't have on hand. Could I make a stock with the shrimp shells? Any help, much appreciated!

Muffins with a crown?

Does anyone have any suggestions for me on how to make my muffins crown? I have a recipe for the best strawberry muffins that TASTE fabulous, but the never look great or have a crown to them. Could it be old baking soda? Heavy amount of oil? Higher in sugar? Not sure what it might be or what I should tinker with to get them right. With strawberry season just about here I love to make tons of them. Any help would be much appreciated.

Does anyone know of a place to buy good quality ricotta-not that grainy watery tasteless stuff you can buy at any and all grocery, but the good decadent creamy textured kind. I used to buy at an Italian market where I used to live but can't seem to find it anywhere here. Makes such the difference in cooking! Thanks in advance!

I thought I'd second Cru Cafe. Only mentioned once in this thread and I think it's wonderful. Very small and cozy and great food. Been to both lunch and dinner there and had wonderful experience both times.
I too will be in Charleston in a few weeks-do any of you Charlestonians know of a newer place that's the place to go? Been to a lot that were mentioned in this thread so I was hoping to try something new.... Inexpensive good eats are always a plus, since we are on a bit of a budget this time. Thanks!

Average Grocery Bill-for 2

Well, on average, I'm about $500++. It just seems a bit much to me, but then again, I am a food snob and refuse to go cheap on certain items-I'm trying to get over it but it's so hard! I must have good butter (Lurpak), good bacon, good cheese, as many organic veggies as possible, and any organic/free range meats that I can find. I rarely find any coupons that are for products that I actually buy on a regular basis. I would really like to get down to under $100 per week, but being the cook lover that I am, I don't see how that's possible! Any advice would be helpful! :) PS. we have cut out eating out all together lately, so 95% of our meals are at home.

Actually-and strangely enough, nothing quenches my thirst after a long night of drinking alcohol, than a glass of ice cold milk. I swear it makes me feel better too- well, rehydrated anyway.

Well, it took me forever to get used to it. I grew up on 2% and sometimes whole. But my husband would only do the skim-so I tried it slowly for him, and for me-for my health....I drink a TON of milk, so it made sense to me to try. Anyway, it took me a few weeks, but now it's all I will buy. They say it takes something like 21 days to get used to/like something. I don't know if that's true, but it was in my case.

My favorite English Breakfast is by far Twinings. I've tried them all too. -Not sure if this will be noteworthy to you, but Cooks Illustrated recently did a taste test/review on EB teas, and Twinings was best- I believe served with milk-which is how I enjoy mine . Delish! :)

Looking for a consensus. What's your average MONTHLY grocery bill for 2 people. -Please note if you're an occasional Whole Foods shopper or any other significant items that could rack up your bill. Thanksgiving in Kissimmee/Orlando

My first thought was Gaylord Palms hotel. Beautiful and festive this time of year and great restaurants-but pricey. Their Sunday Brunch is TO DIE FOR and worth every penny. I would bet for the holiday they will be doing a special dinner to celebrate.

Thick cut Pork Chops recipe

Giada's Pork Chops Pizziaola recipe is delic, but if I'm really not feeling creative, I saute onions and mushrooms and add a can of campbells creme of mushroom soup-I know, I know, sad, but my mother made it a lot so its one of those comfort things. :)

I'm with you FoodChic. Unsalted butter only when cooking to control the salt/flavors of the dish. I do buy salted for those wonderful simple occasions to enjoy butter on toast and that sort of thing. My favorite LURPAK.
