Not a fan of Herbsait at all which is wierd because I LOVE Bayona which is a sister restaurant but with a much better Owner/Chef but if you are looking for a more essential Louisiana food, I would recommend you check out the following:

for something less causal
R'evolution, just opened and I have heard great things about it. Chef John Folse is involved so its sure to be good

Bayona is a great place, one of my personal top five w/ August, Commanders Palace, MiLa, & Kieth Youngs Steakhouse. I have no idea if any of them are going to be open. I know Tom Fitzmorris posts a list every year of places that are open on Christmas eve, you should check out his website nomenu.com

Where are the best places in NOLA, Jefferson, St. Tammany, to buy good cuts of beef (Rib Roast), and where can I find Quail and turtle meat?

If you are not opposed to venturing into Chalmette, you should definitatly give UMI sushi a try. The place looks like a dive on the outside but is actually pretty nice inside (for da parish) They have some of the most creative specialty rolls you will find anywhere, all at a good value and with really good service.
If you give it a try you will be going back, I promise.

Chiba is my favorite place in NOLA because it is one of the few sushi places I have ever been to where the atmosphere is as great as the food.
