Scanpan Fry Pans

Have the 8" pro, used it daily for 3 years. It just died on me. Not sure what I did wrong but everything sticks to it now. Can't even cook eggs in it anymore. Maybe I used too high of a heat, maybe I used the wrong kind of sponge. But I'm getting another one for sure. I'm going with 9.5" this time so I can fry 3 eggs at once.

Are you sure that's safe? We've all heard that one must apply a drop of oil to prevent cast iron from rusting.

2 year anniversary tonight, a little help plz

Beautiful restaurant. We had an amazing time. Incredible service. The food was really good but I've had better. I wish we weren't the only ones dining there ( It was a Monday ). I personally prefer dining at busy restaurants but my gf loved the privacy. I had the lamb and another entree ( can't remember what it was). I also got desert ( ice cream ). My gf had their 3 or 4 course dinner ( can't remember what it was ). Her portions were much smaller but everything tasted great. In a typical New American fashion there were a lot of contrasting ingredients used and the presentation was excellent. She also had a glass of wine. The bill came out to about 235 including tips if anyone cares. Overall I recommend it.

Thanks guys! We've been to Alumette, Papilles, Osteria Mozza and Son of a Gun. Looking for something new. I'll look up Hatfield, Cleo, Redbury. I've been to Littlefork when it used to be a Korean Barbeque place.

We ended up at Spumoni. Amazing service. Not exactly a romantic restaurant but it was cozy. The food was okay. Wouldn't return but glad we checked it out! Plenty of restaurants do Italian much better. In terms of food quality. Speranza comes to mind. Wish there was one in the Valley.

I'm gonna be stuck in the valley with my gf tonight. We're looking to grab some food and catch up. Anything decent around? Not looking for anything too fancy or too casual. We live in Hollywood. My favorite restaurants are in Silverlake. Anything near Studio City or Encino would be fine.

Sur la table stock pot - takes forever to boil some water ?

Just to answer your questions - I already use a lid, i live in Hollywood Hills ( so probably not at sea level ), and I probably won't have time to sand and paint the bottom of the pot.

That said, it seems that there's nothing wrong with sur la table and I guess I'll just start boiling water before messing with the pasta sauce and the shrimp. Thanks everyone!

Sur la table stock pot - takes forever to boil some water ?

I'm using a gas stove on it's highest setting. A regular vintage gas stove not a huge commercial one. To give you an example it takes just a few minutes to fry eggs on my gas stove, and my cast iron skillet gets smoking hot in 4 min.

I'm using an 8qt ss sur la table stock pot like this:

I should add it feels very thin in my hands, it barely weights anything. Should I consider investing in an all-clad, demeyere, or a le creuset stock pot or will I be getting the same results with those?

I got a few high-end pots and pans but someone told me to not spend the big bucks on a stock pot since they are all the same.

Is it me or does it take forever to boil some water in a Sur La Table pot? Not sure if it's the quality of the pot or the large amount of water. I'm cooking pasta and trying to boil 4qt of water. I've been waiting for 10-15 min already..

I'm going for more flavor. I've been eating plain fish with rice - healthy but a bit boring.

So by "marinate" you mean rub the fish with the sauce mixture and let it be for 20 min? ( Sorry i'm still a newbie ).

Easy fish sauce recipe?

I finally learned how to cook fish without drying it out ( saute for 2 min on one side then finish in the oven for 6 min at 350 ).

The only problem is I'm tired of eating fish and rice by themselves.

Do I pour these sauces over the cooked fish filet or saute in them? I usually cook salmon or cod or whatever is wild caught at whole foods.

I got low sodium ponzu, brown rice vinegar, mirin, coconut aminos soy sauce substitute, toasted sesame oil, and ginger juice.

Can i roast in my Demeyere saute pan with the lid on ?

My kitchen is running out of space so i don't want to buy a roasting pan or another baking sheet if i don't have to. Will my saute pan do for now? The oven's upper rack is a bit rusty/dirty so i'd like to use a lid on the lower rack so the dust/dirt doesn't somehow end up in my food. ( I got a vintage oven ).

So will the saute pan do the trick?
Is it safe to roast with the lid on? Will the lid affect cooking times?

I usually roast chicken thighs/breasts and veggies at 425 for about 20-25 min in a baking sheet with parchment paper and I'd like to start using both racks at the same time now instead of just the upper.

I also own a large cast iron skillet and an enamel dutch oven ( i would hate roasting in those because of the heavy weight ).

I thought you meant green on the inside. I guess they might have been greenish on the outside don't remember but they were definitely yellow on the inside.

My potatoes were dark brown so they might have had a green tint that i didn't notice. I kept them on the lower shelf in the fridge. From now on I'm gonna start peeling them just in case. Ahh! It's gonna take forever to peel all of them, bummer.

Just tried another bite. So they taste great at first. Then after about 3 seconds the bitterness kicks in, then after about 7 seconds there's this awful feeling in my mouth that stays for a few minutes. Like really bad not just barely there.

Forgot to mention I used a bit of black ground pepper could that be it? I turned my vintage peugeot grinder twice over the entire pot.
