V&V What's for Dinner? - Spring!

Kimchi quesadillas and runner beans with black beans and chilli.

The quesadillas were from Serious Eats, and the runner beans were from Every Grain of Rice. Both dishes were good, but, I think, too similar in flavor. I used Korean chili flakes for the ground chilies in the beans, as Dunlop suggests, and I think that's why.

I am happy to find a good recipe for runner/romano beans. I get them every year from our CSA and never know what to do with them.

Thanks! That Lithuanian borscht looks similar-ish to a Canal House recipe I have. The Canal House recipe just calls for sour cream and heavy cream, though, no buttermilk or kefir.

Chard tacos and fast mashed black beans.

The tacos are a Rick Bayless recipe and are old favorites. The beans are a Roberto Santibanez recipe and were surprisingly good, especially given how easy they were. They were just doctored up canned black beans. I can be a bit of a snob about canned beans, but I really liked these.

Vegan Comfort Foods

Followup: I recently made Vegan Diner's Home-style Veggie Noodle Soup. My verdict: excellent soup for the sick, but very low-cal.

The soup did indeed taste as I remember the Campbell's soups of my youth. I liked it better than Amy's No Chicken Noodle even. However, the recipe makes a LOT of soup - maybe 3 quarts, maybe more. I will halve it in the future. And, I was starving about two hours after eating a bowl. It was perfect for my sick husband, though.

Anyone ever try Vegan Jel by Natural Desserts?

A long time ago I made Falkner's Demolition Desserts recipe for marshmallows, the one using xantham gum and egg whites. I guess you could say it turned out, but I didn't like the flavor at all.

It could it have been user error, though.

I had intended to make a blueberry buckle for dessert, but the oven caught fire while preheating! Electrical fire. Cheap renters' stove...

ahem, hope this isn't weird, replying to myself before anyone else has chimed in

anyway,

Ideas in Food omelet soufflé and
butter lettuce/frisee salad with April Bloomfield's lemon caper sauce, which was a little too strong for such a simple salad

I had mild technical difficulties with the omelet, but it was kinda awesome.

Thought I'd start a new thread now that it's April. What have you all been eating?

Recently, I cooked Stir-Fried Oyster and Shitake Mushrooms and Twice-cooked Chard from Fuchsia Dunlop's Every Grain of Rice. Enjoyed both, especially the mushrooms. Served with jasmine rice.

and

Steamed Artichokes with Melted Butter, Twice Baked Potatoes, and Buffalo Tempeh.

Late, but

rice and lentils with caramelized onions

I don't have a perfect recipe, but I started with Claudia Roden's. The rice is better if it's cooked in oil a bit before adding water.

The cookbook Vegan Diner has a soup that sounds just like the Campbell's broth-y soups my mom fed me as a kid. I haven't tried it, though.

V&V What's for dinner, January-February 2013

Last night was butter lettuce and radishes with April Bloomfield's green goddess and spaghetti with carrots from G.Hazan's Thirty Minute Pasta. I thought the green goddess was ok, but the H thought it was terrific. The pasta is a weeknight favorite.

Tonight was the butternut squash soup from Southern Comfort with bread and cheese. The soup is my favorite butternut soup I've made at home. Still wish the flavor were a little, I don't know, rounder? I didn't put the full Tbsp sugar called for since the recipe said it was optional. Maybe that would have helped?
