sent you an email. BTW, the pancetta was awesome. It's a good place to start when learning to cure meats because 1) pork bellies are fairly cheap and available from the mexican or asian markets, 2) you don't have to have special equipment or supplies (grinder, casings) to make it, and 3) you can eat it in 3 weeks total. Plus, there is a great pancetta recipe on this website. Just make sure you really rinse off the salt and spices before hanging it to dry. The first time I made it, I didn't rinse it very well, and ended up with a VERY salty log of pancetta.

well, my wife has been pretty tolerant of me filling our neighborhood with hickory smoke in the summer, so I can't complain too much about her aversion to hanging logs of pancetta.

I had this same question last year, and tried multiple places around Durham and Chapel Hill (Southern Season, deer processors, etc) with no luck. I ended up ordering a bunch of it from Butcher & Packer in Detroit.
If you live anywhere near Durham, I'd be happy to give you pink salt. My wife got tired of seeing logs of pancetta hanging from the ceiling fan in our guest room, so I probably won't have a need for it again anytime soon.

Help Me Decide - Allen and Son Or Lexington BBQ?

My advice would be to take the detour and visit Lexington #1. I promise you will never regret those extra 35 minutes, and the scenery on 64 is nice. But since you're already planning a 35 minute detour, why not take the extra 10 minute detour and get some Allen & Son bbq too? They are both excellent, different examples of bbq at the highest level. And that way, when someone comments that Lexington #1 is better than Allen & Son, or vice-versa, you can add your opinion :) By the way, I sampled these two places (and four others in Lexington) on my birthday last year, and I will tell my grandchildren about that day trip many decades from now. And for sake of argument, the "outside brown" from Lexington #1 with a splash of the sauce from Allen & Sauce is the best bbq in the state. And I'll probably be banished from the bbq world for mixing the two...

The "New" Taqueria Lopez, post-3/08, Durham, NC

I second bbqme's sentiment. Go to Los Comales, and order a gordita al pastor, or a huarache al cachete, or a corn quesadilla al barbacoa borrego. And make sure to add a papusa (awesome). But be prepared to never visit Lopez again.

I couldn't agree more. The cole slaw at Allen & Son is pure peppery goodness, and when their deep fryer is at the right temp, the round hushpuppies are hard to beat. But I also think their BBQ is better than really good, probably the best I've had outside of Lexington.

Best tacos al pastor in Durham/Triangle area?

I agree. The pineapple is key. I've found that Compare foods off of Roxboro Rd. sells uncooked pastor with pineapple ($2.99/lb) that is pretty tasty. Their chorizo is good (and cheap) as well.

Does anyone have a favorite place in Durham or the greater triangle area for tacos al pastor? Personally I like Los Comales on Roxboro Rd, but was wondering if there is something better out there that I am missing. Does anyone know of a place that makes the pastor the old-fashioned way on a spit?

NC bbq slaw help

Allen and Son slaw is the best mixture of cabbage, vinegar, and pepper I have ever tasted. Very peppery!
