So just how do you eat caviar?

I worked in catering for a while...We served tiny baked potatoes scooped a bit to hold sour cream and we topped that with "rinsed" and dried black lumpfish(cheap) caviar...We also made a "caviar pie" which was a creamed cheese and cucumber base topped with sour cream and chopped egg and green onions then black lumpfish was sprinkled on liberally just before serving. Caviar turns things an eerie bluish green and Im not sure why so do this last minute to keep the discoloring to a minimum...We also made a lox and caviar checkerboard...White sandwich bread(two day old is best) cover the bread with a seasoned creamed cheese mixture...spread liberally and evenly on sliced bread...cover half the slices with a solid layer of thinly sliced lox and cover the other half with black lumpfish caviar that has been rinsed in a screen strainer with cold water and then the caviar to drain in the strainer in the refrigerator for at least 30 minutes...sprinkle liberally over the bread with the creamed cheese spread...I liked them covered solidly but if you prefer just a sprinkle that's your choice..Trim all bread of their crusts.Cut the whole slices in quarters with a very sharp knife and wipe blade after each slice..Try to keep the squares as uniform as possible.Piece together your checkerboard on a serving platter and garnish the salmon with a rosette of creamed cheese and a dill sprig and the caviar with a sprinkle of finely grated egg and finely chopped green onions...this sounds like a lot of work but its makes a beautiful presentation....another hot recipe for caviar ( and again we used black lumpfish) was angel hair pasta dressed with burnt butter green onions and sprinkled liberally with cavier...sour cream may be served on the side...Hope you try some of these...Good Luck

Theres a chain of restaurants here in Florida called "Pollo Tropical." I know they are all over S Florida but I did see one in Brandon near Tampa the other day...The menu is Carribean but lots of Cuban favorites on there too...Google it and see if that's what you have in mind...I cant wait to try them myself...

funny you should mention a "gas staton" deli because the Shell plaza in Mulberry does fabulous fried chicken too...only trick about these places is getting there when its fairly fresh and hasn't been laying around in the hot box for hours...

Good Breakfast Buffet in Melbourne near the Crown Plaza

Im going to be in Melbourne for a conference..This will be a weekdasy so no Sunday brunch suggestions will help...I usually end up in a strange city at "a" buffet, only to find out that "THE" buffet was down the street or around the corner...Again,Im hoping for something "near" the Crowne Plaza which is around the 2000's on A1A...The Crowne actually has a buffet breakfast but the pics arent that impressive....Thank you for any referrals in advance...A fellow foodie...

Good Chinese and Asian anywhere in Florida???

If you are in Daytona you should be able to find a wide variety of Asin food in orlando...thats closer than Tampa....Im in Lakeland so I usually gravitate to Tampa...I go to the Budhist temple for their Sunday buffet/market...The PHO there is my first and still my favorite....Im also curious if anybody has tried the Noodle Bar at the Hard Rock Casino in Tampa..Its fairly new and if you google the Casino you can see their menu..I find most of the food at the casino really bad and over priced (unless you get freebie points) but I think Ill still try the Noodle Bar...I have heard alot of Asians eat there so that has to be a good sign..

Where to eat in or near Lakelands, FL

I dont think you have to leave Lakeland to get a decent meal...While we dont have the array of Cuban/Spanish restaurants that Tampa does there are several places here that do a decent job on a Cuban Sandwich...Silver Ring and Kongas in S Lakeland.Also Cuban Delights on 540 is great...FOr other cuisines...try the Saigon Cafe at lakeside mall and theres a Bonefish grill that everybody says is great...Also at the mall is a Louis Pappas greek restaurant that has the BEST Greek Salad Ive ever had ANYWHERE!! Get the chopped salad and ENJOY...For great Sushi or a bowl of Pho go to Gosh on S Fla Ave...I like Abuelos for mexican rather than Tapatios...For a sports bar menu try Lakeland Ale house..Ive never had a bad meal there...I know Im going to hear some moans but the new Olive garden by the mall is worth a mention...It has a huge following so they must be doing something right...The all you can eat soup and salad(great salad) is the best deal around for lunch..Freds market on Harden Blvd is just down home country Cookin' but its good and their Sunday breakfast/brunch is as good as it gets...You WONT leave hungry and its a fair price....SOOOO...If you cant find something decent to eat in Lakeland you just arent looking hard enough or are not very adventurous...

Tarpon Springs (Who has the best Greek Salad?)

I was back in tarpon Springs last week and we ened up at Dimitris...The location is great...its right on the river and we actually got an outside table for lunch...The salad there was just so/so...A friend orderred the fried Calamari appetizer and it was a nice sized portion ..I orederred it as an entree and paid double for it and got the same amount,with some soggy fries and tasteless sauteed veggies...We did get the feta spread and it was good but they give you a mound of spread and 1,I repeat,1 pita bread cut into triangles...When you ask for more bread they charge you 2.00 a round...For bread...Our bill was over 100.00 and we had a 10% discount from taking one of the boat excursions...I thought it was overpriced for what we got...I shouldnt make a judgement on one visit but i doubt Id go back...Ill still go to my Louis Pappas in Lakeland when I want a good,should say GREAT salad...Im through trying to get a good Greek salad in Tarpon Springs...All of Tarpon Springs has a "carne" atmosphere and every person and vendor you pass is trying to shake you down for money and everything seems mediocre to bad and REALLY bad.....

Is there such a thing as yogurt with vegetables?

This isnt a cup of yougurt idea but rather another way to combine yogurt with a vegetable...Borscht is an Eastern European beet soup and it is usually garnished with a huge blop of sour cream but plain unflavored yogurt would be just as good...Its almost Passover...try it???

A Century of Dining in Tampa

Andy...dont forget to include some of the low end places like the Woolworths lunch counter downtown...The old Ayers diner on Kennedy (later moved to Dale mabry.) The original Dow Sherwoods Village Inn on Dale Mabry...Everybody went there...Ofcourse Goody Goody hamburgers...The Wright Gourmet house educated us on the delicious possibilities with a sandwich and still does...Back to the old downtown restaurants...there was an Old South Pit BBQ in the basement of one of the tall buildings and their stuff was fabulous...Remember the big CHOP SUEY sign on top of the Bayview hotel with the arrow pointing down to a basement Chinese restaurant that was the only Chinese restaurant in Tampa for many years...Licatas steak house downtown that served your steak on a flaming sword! The list of old Spanish/Cuban restaurants in Ybor city is endless but you must include The Silver Ring...People from several counties away would drive there to buy Cuban sandwiches..(the new franchises by the same name are not as good.) Richard Gonzmart at the Columbia restaurant would be a good source for help with the old Ybor city restaurants..

Ground Beef: Are my taste buds getting too old, or does Ground Beef have little taste compared to apprx 20 years ago?

I have had the same complaint about ground beef for some time...I NEVER buy any beef at Walmart...All of it is tasteless and has a strange texture...I used to get decent ground beef at Sams Club(totally different meat than Walmart) but even that doesnt taste as good as it once did...When I really want good ground beef I go to a store we have called Winn Dixie and have them grind whole cuts for me and I make sure to tell them to leave the fat on and/or add more fat if its too lean...The butcher will tell you what cuts in the case will make the best ground beef. Obviously finding those whole cuts on sale is your best bet...My mother actually used to have them grind steak cuts and ofcourse her hamburger steaks were fabulous because it WAS steak...I do think you can still get good ground beef but you really have to look hard for a store that buys quality beef and does its own cutting and grinding but be prepared to pay alot more than we used to for ground beef...I also do 50/50 beef and ground pork for some recipes and its fabulous...

Who has the best burger in Tampa/St Pete/Clearwater

i remember Goody Goody very well...It was absolutely the best hamburger ever..You might not have known that that recipe was bought by a restaurant on Florida Ave in Tampa called Oakwood or something...it was where the old Frisches Big Boy used to be but sadly its gone now too...I have no idea what will become of the recipe...I searched the internet and found what some think is the recipe for that tomato sauce they used on the hamburgers and I experimented with it until I got it pretty darn close..Also important is making the burger itself as much like theirs as possible...Just a 4 oz patty of 80/20,a regular sized hamburger bun,diced white onions and a few sour hamburger dill chips...Also important,toast the bun face side down on a griddle then assemble all of the above items and top with a generous amount of the tomato sauce...I actually made goody goody burgers last night and it always takes me back to my childhood...Again...google Goody Goody hamburger sauce recipe and see if you can find it...

Id consider the Greek Tsatziki sauce a yogurt with vegetables...Its made with "plain" yogurt,diced cucumbers,onion and garlic with a dash of white pepper and squeeze of fresh lemon...Look it up and make some and serve it with grilled meat or just dip some toasted pita triangles in it...its fabulous...

Tarpon Springs (Who has the best Greek Salad?)

I did try Hellas and thats where I had the very uninspired Greek Salad..It looked like a bad tossed salad with a small chunk of feta thrown on...I went with memories of the old pappas Greek salad and it was nothing like that salad...I have eaten at the Louis Pappas Marketside cafe franchise restaurants in Tampa and Lakeland and their salad is fabulous..It comes regular or chopped and I love the chopped..It just seems strange that the only place you cant seem to get a great Greek Salad is in Tarpon Springs..I know the greek salad isnt realy authentic greek,but its what those of us old enough to remember the old Pappas restaurant in Tarpon Springs think of when we go for Greek Salad.

Greek Food in Tampa??

I went to Tarpon Springs and ate at Hellas and it was just OK but the greek salad was very disappointing...The old pappas greek salad in Tarpon springs was a real event...I think that salad was the thing everybody talked about when they went to tarpon springs to eat...Although Pappas in Tarpon Springs in not what it used to be,the Louis pappas marketside cafe franchise restaurants(Tampa and Lakeland) DO have what I think is now the best greek Salad around..Its got all of the classic greek items(great potato salad underneath) and it comes two ways,regular salad cut or fine chopped...If you are taking out,Id get the regular chop because it holds up longer...The fine chop is my favorite but I only eat it there because it gets kinda soggy as a carry out...Try it...You will see what a greek salad is supposed to be..

I went to Tarpon Springs a few months ago and was directed to a really popular Greek restaurant (it wasnt Pappas which is bad now so I hear.) I liked the restaurant overall but the Greek Salad was awful..I was surprised because the salads were a huge part of what people think of when they think of Tarpon Springs and Greek food...I get WAY better salads here in lakeland at the Louis Pappas "franchise" restaurant...Im looking for some recommendions for the best Greek place in Tarpon Springs...

Anyone else not like soup spoons?

Soup spoons are a pet peeve of mine...They are usually TOO SMALL for my taste...barely distinguishable from teaspoons at times...Having said that..I dont like the "round" cream soup style spoon...it just feels unatural especially if the bowl of the spoon is too deep...I like the elongated oval soup spoons that have a gradual slope into the bowl of the spoon...Thats alot about spoons! but wait,theres more!! I "prefer" sterling but at least silver plate spoons...real silver dinnerware has a totally different feel on your lips when you eat with it...its like satin...Genearally speaking,real silver is more carefully made and has a balance to it that stainless steel often does not and the feel of that utensil in your hand heightens your dining experince...so drag that set of silver or silver plate out of the china cabinet and polish it up and USE IT...The more you use it the less you have to polish it!! And dont wash it in the dishwasher (terrible) Wash and dry it by hand...

BOILED PEANUTS

you are so right about the green peanuts...that is the only way they were eaten as boiled peanuts when i was a kid was GREEN...The reason so many people who sell boiled peanuts on the side of the road dont use green is that the price for green is 3 or 4 times what it is for "parched" peanuts...The greens have to be refrigerated after washing because they will sour so that makes shipping more expensive and raises the price considerably,...The greens DO cook faster than parched though....Jumbos are just great but they also cost more...Peanuts are not cheap anymore!!!

There is a new Noodle bar at the Seminole hard Rock Casino in Tampa...They have Pho and Im waiting to get some feedback on that place...If you google the casino you can see the Noodle bar site and read the menu...It better be good...Says a bowl of Pho is 12.00!!! Martha Stewart is back

I watched it yesterday and its a great show...its the "pan searing" episode...I love Martha and have followed her since her firs "eddings" book...I worked for a catering service here in Florida at that time and her book revolutionized catering in this area and Im sure in other areas as well...There are some really BAD cooking shows on the food channels and Martha is still head and shoulders above all of them...You go girl.

suggestion for soup for New Year's Day open house?

How about Spanish Bean Soup?? Its a big favorite here in Florida..Google a recipe and see if it appeals to you...You will need spanish chorizo,garbanzo beans(use canned) a meaty smoked ham bone and some saffron..We serve it with lots of hot crusty Cuban bread but if you dont have Cuban bread where you are use a crusty French bread....The rest of the ingredients are ordinary things...I hope you try it and i know you will love it...

Smoked Mullet Roe: nay or yay

its mullet season here in west central Florida and my brother just brought me some fresh fileted mullet,2 large smoked mullet and a bag of white roe and yellow roe...My mother loved the white roe and she just breaded it with a corn meal mix and fried it shallow in oil...not too hot...treat it like fried oysters and it actually reminds me of fried oysters...The yellow is totally different and roll it in seasoned corn meal and fry it a little deeper but it takes longer than you might think to get it done all the way through...I was looking up cooking suggestions for it when I ran across this blog and one of them was to "par boil" the yellow roe than deep fry it and I might explore that method this time...My brother doesnt bread his at all and just pan grills it (like a hot dog.) I am from the South obviously and I rarely eat any kind of fried fish without GRITS...I like a little cocktail sauce and some fresh lemon with the roe...The fried yellow roe is delicious leftover for breakfast with cheese grits and eggs...reheat it in a toaster oven or pan grill it a little and serve it as the meat portion of your breakfast...I also hear that smoked yellow roe is great and I have some of that to sample this time too...Im sure there are fancier things to do with this delicacy but Im just too sentimentally attached to the way my mother and father cooked it to deviate much from how I first learned to love it...I also like the fact that this is a sustainable fish mentioneed earlier by "hunduranterror."

My Kaffir Lime Tree is Dying!

i agree that its always best to buy "grafted" fruit trees from a good nursery...you will get good quality fruti and much faster...Having said that,I have a grapefruit tree that came up by itself from seed and they are very good...it did take 20 yrs to get fruit though...I also have a huge Florida rough skinned lemon tree that came up from seed and has LOADS of the best lemons i have ever tasted....

Seebreez Tampa Deviled Crab Recipes

My brother went to the food truck yesterday to check it out and he was NOT happy with the deviled crabs...Hes been eating them for 50 yrs here in tampa so he knows what they should taste like and he said these were not that good...He complained about the strange texture of the crust and also the crab filling had a strange texture...they are 3.50 and he said it would take 3 of the Seabreeze crabs to egual one of Brocatos deviled crabs (6.40) and ofcourse Brocatos are fabulous...I think Ill still check out the food truck...Maybe the crabs were just bad that day ...If anybody goes and gets some please post your opinion...If the Seabreeze reads this board maybe they can recheck their recipe or technique and make some changes..

Cigarette smoke gets in your food

hey fried clam fanatic...I too love fried clams...i worked at Howard Johnsons as a kid and my free meal everyday was a clam dog...Over the years Ive noticed that clams just arent on menus the way they used to be and they are even hard to find frozen in stores too...Imagine my surprise when I went to a Golden Coral in Lakeland,(yes I said Golden Coral) and there was a huge pan of fried clams with tartar or red sauce...I jumped for joy and Ill go back there just for those...Im not sure if all of the Golden Corals have them but you might check out one near you...
