Persian/Armenian in Fresno

Hey PB, you remember correctly. Yerevan has been around for over a dozen years... the owner just keeps plugging away serving old world dishes. It is tucked away in the Von's shopping center and hasn't changed much over the years.

Another small Armenian ma and pa restaurant... great flavors in classic dishes, humble furnishings, difficult to communicate with owner - I love it.

Hunan changes coming [Fresno]

Looks like a grand remodel, new kitchen, fixtures and TWO menus. No more secret list of the chef's specialties, although I am sure he will still cook for special requests.

Here is the link to a recent article in the local paper about the reopening. (hope the link stays good for a while)

Fresno/Clovis Dining

Hear, hear. Thank goodness for our holes-in-the wall. My wallet thanks them and I definitely derive more pleasure patronizing these survivors of the economic sludge that has wiped out dozens of our establishments in the last few years... literally dozens - PolarBear started a list as they went down, but it was heartbreaking to keep the list going. So get out and help these survivors when you can Fresno.

Good Chinese take-out in Fresno

... and the old reliable, Imperial Garden - Blackstone just south of Herndon. Good value, fresh ingredients. They do a lot of takeout but can get your order ready usually within 25 minutes. I almost always call it in, 559-435-4406.

Korea Market in Fresno (Chow secret?!)

Thanks for the news about where to get Korean fixings. Sad to hear Yummy's near Herndon and Blackstone closed. That used to be my little Korean hideaway.

Ten Things Anthony Bourdain and David Chang Hate

I fantasize about having a job like his, and your'e right he has been around a long time. But part of the fantasy revolves around not having to be taken seriously beyond comments like 'that tastes really good' or 'this is the way it has been prepared for generations'. He skates over the deep stuff and I like him for the lack of pretense.

Ten Things Anthony Bourdain and David Chang Hate

Bourdain is grabbing his 15 minutes, and we all know it. I like watching his show but it is running out of juice and the snarkiness will only carry him so far. So let's not give him any more cultural significance than he really carries.

sar•casm
(sär'kāz'əm)
n.
1. A cutting, often ironic remark intended to wound.
2. A form of wit that is marked by the use of sarcastic language and is intended to make its victim the butt of contempt or ridicule.
3. The use of sarcasm. See Synonyms at wit1.
4. See Bourdain, Anthony

[Late Latin sarcasmus, from Greek sarkasmos, from sarkazein, to bite the lips in rage, from sarx, sark-, flesh.]

Top Chef - Las Vegas - Ep. #10 - 10/28/09 (Spoilers)

It now seems right that Kevin should go all the way. Aside from having the passion and skills (and palate) he let the audience know that his family all live on the same street, and grandma still cooks breakfast for the clan every morning. Who can beat that mojo?

Meals in the Field [Fresno]

I wasn't sure where to post this but when I searched for Hmong food, this thread came up on the list.

Today's Fresno Bee has a nice article on Hmong food and a book recently released about this 'mysterious' cuisine. Here is the link to Joan Obra's article. Sometimes the link will go right through, sometimes the newspaper will ask you to register (free) to access the page. It is a hassle but Obra's articles are worth it.

Top Chef presenter, enlighten me

Padma has been part of the formula that has made this show very popular. And that from a relatively obscure cable channel. So love her or hate her, the producers don't want to change a working mixture of beauty (I wouldn't turn down a date with her), adequate eloquence (I can understand what she says) and celebrity (with her famous scar and prior marriage to a decent author who had a fatwa on his head for many years). America loves this quirky mix of judges and hostess and bottom line, the food and the chefs are getting the exposure like never before.

Taco Recon in the Fresno Area

I have to admit I have been in love with Rosa (co-owner) since she was a waitress at a Mexican joint at Marks and Shaw in the late 80's. She still can't speak English very well but she serves up really comfortable meals. This family is passionate about their food. They unashamedly dedicate their excellence to the memory of their daughter who died in an accident near the old Guadalajara on Weber. I heartily agree the locals should support this business.

Bourdain in Thailand-I'm SOOO excited!

I liked the episode but I can see where the format is starting to wear thin. You've got to give it to Bourdain though, the sonofagun lives the life. I liked it when he stated his personal foodie philosophy that he was going to try stuff at least once. It even seemed the food was better when he was in an area experiencing social unrest - like Thailand and when he was in Sri Lanka.

Kauai, where to get great food and fresh fish

I forgot to mention - if you are on the north shore, this is the place I usually shop for fish or steaks - Hanalei Dolphin Fish Market. Then there are the Foodlands in Princeville and Kapaa for the rest of your needs.

Mango Chutney and ?

While mom was still with us, on every one of my birthdays, she would fix her special chicken curry and serve it with mango chutney and fried eggplant. It was the main dish for my birthday treat for 40 years or so... and every year she would ask what I wanted for my birthday dinner. I miss her - and for some reason mango chutney has a special spot in my heart.

everyday coffee

In my last post to this thread, I gushed about Major Dickason's blend. There are some Blue Mountain and Kona coffees I would like to have all the time, but the mortgage comes first. I still love Dickason's, but I stumbled on a close second for flavor and value. I know the New York crowd has had Chock Full O' Nuts - original blend - around for years. But I just tried my first cup and this is a great everyday blend. I get giddy when I come across good stuff that has been around for ages.

Favorite Julia Child "moment"?

There were a couple of times when she would sternly tell Jacques he shouldn't pour the brandy for the flambe directly from the bottle. She warned him the flames could jump back at the bottle and cause an explosion. Jacques would just smile and look at her sideways. Then I noticed a few episodes later that he would indulge her and use another container to apply the brandy, and he would smile. They had a great relationship.

My favorite moments... when the food was was done and Julia would take her first bites of the dish - the look on her face as she savored the food - priceless.

PHO in FresNO

I'm with you. I get really senimental about Pho 99 because it was the first location I found in Fresno... and it still serves a good bowl. If you want to try other places, you are already in the right corner. Just up 1st Street are a bunch of restaurants which serve decent pho, you've just got to try and compare. Then you can even go south on 1st to B & K Asian Kitchen for Thai and Lao dishes, and they also serve pho ( and really good laap).

Here is an old thread which discussed some of the pho restaurants in town. And I also want to put my vote in for a crawl.

Fresno: Where to find the best...?

I also don't know what restaurants regularly serve raw oysters, and I would probably be more inclined to buy them myself and fix them up the way I want. So my suggestion is Central Fish, which is now a part of the American Fish and Seafood Company network. They ship their oysters in daily.

As for the spaghetti and marinara with meat sauce, I like the family chain - Di Cicco's (gasp!!!). I know they share supplies and menus, but I seem to gravitate to the one at West and Herndon.

Cooking a whole pig this weekend

If you do get a China Box, here is a whole series of videos for prepping and cooking. I am so jealous. I would prefer JungMann's open pit, and sitting with the pig for 5 or 6 hours ... along with friends and a good variety of summer cocktails. A whole pig is an event, both the cooking and eating.
